You already have a preamp, which you would probably need for a modern receiver. Yamaha is still well made, imo. If you use tower speakers, you probably won't need a sub. If you use a surround sound set or monitors (like 8"s), you might want a sub. Don't turn the sub up past 35%, and you should be fine. If you use towers, get a slightly thicker gauge wire. Won't cost much more, if anything.

What kind of pre-amp? Do you mean a phono pre or a full featured preamp with multiple inputs etc.?
Almost any mass market receiver with HDMI would work great for this. I like Denon and Yamaha receivers, I can offer you more model specific suggestions once we establish your needs.
Sonos is cool, but it's amazing what you can accomplish with a $30 chromecast. You can't stream your computer files using Chromecast, but I think just about any streaming service works with it. Maybe not Apple Music. I use Google Play music, which allows me to upload my own music for items not available on the streaming service (i.e. Phish shows) and then I can cast that to Chromecast.

95% of audio reviewers are completely full of shit. With the caveat that every online audio community has it's collection of insane audiophiles who believe $1,000 RCA cables can improve the sound of audio, generally the most reasonable communities I've found are www.avsforum.com and www.reddit.com/r/audiophile/. The best reviewers are Tyll Hertsens at www.innerfidelity.com (thats mostly headphones though) and www.noaudiophile.com (totally objective and his reviews are hilarious).

Good call on pre-amp. I have a phono pre-amp, specifically the ART DJPRE 2. My turntable is a 80s Technics table that I really like a lot. I forget the model number off the top of my head but it works great.
As far as streaming goes right now I really only use Spotify. I don't really keep any local files anymore except for the occasional purchased Thee Oh Sees album or, like you, Phish shows. So I'd definitely say that would be a good feature to have. I've used Amazon Music in the past but I let my account lapse because I wasn't impressed with it.
I'm mainly interested in having a good quality setup in my living room and speakers for streaming throughout the house. Don't care about trying to hear the turntable or TV in other rooms. I just want to be able to turn on a playlist while I do chores or have a party and get it playing in every room.
Yamaha or Denon receivers actually sound fantastic because I could buy one of those with Marriott points haha.
What other info am I missing to narrow down my needs?

On the Sonos vs Chromecast bit. My buddy has a full house Sonos set up that I've played with quite a bit (when I'm walking over there the second I'm in range I like to take over his stereo and blast Hallowed Be Thy Name in every room to announce my arrival). Overall it's a good system, but I found the UI to be just frustrating enough that I couldn't commit to investing in a system of my own. Playing music that's preloaded into the system on playlists is easy, but finding a random new song you suddenly have to hear when your drunk is unnecessarily complicated.
I got the $30 Chromecast, which also isn't perfect, but it's only $30, so I'm happy for now and I'll wait and see how the various technologies develop.
One thing about using Spotify on Chromecast- even though Spotify lets you load your own mp3s into your playlists, you can't actually stream those songs via Chromecast. Chromecast only lets you stream from Spotify's library. This is less of an issue now that Prince and Neil Young are in there. The upside is that Chromecast does this because it links directly to your wifi network and plays song direct from Spotify, so it'll continue to stream if your phone/computer turns off or is out of range. I used to use an Apple AirPlay to stream and the fucking thing cut off all the time, so the Chromecast feature is an overall plus for me.

$500ish? I was thinking about going the secondhand route on Ebay. What do you think? Too risky?

I've bought and sold tons of audio stuff online with very few issues. Having said that, the benefit of buying new is taking advantage of return policies if you don't like the speakers. In home audition policies are great, especially if you don't have a store you can go to and audition speakers.
Could be tough to find a set of tower speakers for $500, but you can get a great set of bookshelf speakers for that amount. And you can always add a sub later if you want more bass response. Bass response is dependent on the size of your room, the bigger the room, the more low frequency energy you need to feel the bass.
A few weeks ago I was raving about the JBL LSR305 active monitors I bought for my desktop rig, they are marvelous little speakers with surprisingly good bass response. They have amps on them, so you would need to make sure the receiver you chose had preamp outputs (you wouldn't be using the amp on the receiver).
Or you could get SVS Prime Bookshelf speakers for $500. I haven't heard them personally but SVS has a 60 day in home audition period, and they are generally reviewed well. These are standard passive speakers.
Those are just a couple of recommendations, obviously your budget will go much further when buying used. And please don't limit yourself to my recommendations, there are tons of different speaker companies and my experience is extremely limited. I suggest browsing the speaker forums at AVS Forum and learning about different brands and models in your price range, there are a lot of knowledgeable folks there.

almost forgot, I haven't heard them myself, but ELAC is the hot shit right now in budget speakers. The Debut F5 is a bit out of your budget, but it's a tower speaker.

Okay, so I wasn't aware of this when I bought it, but upon further inspection "Yeezus" never got an official vinyl release? The hell? I picked up the record today because it seemed like a good deal considering Discogs and eBay prices (I got the orange vinyl variant for $10). What's the deal with this, how could this have not gotten an official vinyl release? I've bought a number of bootleg vinyl over the years, but it has all been stuff that is otherwise otherworldly in price, but I figured for sure this was a legit copy, not even an inkling of an idea this might be bootleg crossed my mind. The record itself sounds fine at high volume, but this is obvious hiss and pop throughout.
