Tired from Mountain Jam. Need to wash stuff and unpack later. Then re-pack for heading to Chicago tomorrow. Looking forward to Friday and just relaxing.

You build up a tolerance to it. I think. Not certain. There was a point in my life where there could never be enough sriracha on anything, then I quit cold turkey for a while, and now it's back to setting my mouth on fire.
Alton Brown made me feel guilty about my love of sriracha, too. So now the bottle just stares at me, tempting me. Raspberry sriracha ice cream sounds fucking delicious, goddamnit!!!! Why have you forsaken it, Alton, whyyyyyyy?
I read an article two or three years ago about how the guy who makes sriracha (the original with the rooster and green cap) only uses a certain Californian pepper, and I think he only uses them at a certain stage of ripeness. The article went on to explain how the explosion of sriracha's popularity could eventually lead to a point where supply can't keep up with demand. So it could very well be that at this point they are using less peppers in order to produce more sriracha, thus leading to less spice.

He claims that its just overused in the culinary world. I can't disagree with him. There's probably a dish on every menu that has sriracha featured. The straw that broke him was when a contestant on Cutthroat Kitchen made raspberry sriracha ice cream since then he hasn't allowed it on the show.
But seriously, that sounds delicious if done properly. There's a local ice cream place here that makes a Cajun vanilla flavor. I usually get a scoop of that with a scoop of chocolate and, boom, delightful Mexican chocolate. It warms but doesn't overpower.

If it was a knockoff, it's probably just less spicy in general. Rooster bottle is the only true sriracha. All the others play sweeter on my palette.
