Take With You: 1 Tub generic BBQ filling 1 Tub taco filling 1 tub salsa 1 pack of 10 tortillas
Combine into delicious wraps, heating the meat in a pot if you desite. You can freeze the meat for the ride.
Pasta A'La Roo
Make up a thick hearty type of pasta. Mix with tofu or beef crumbles, a package of frozen mixed vegetables, and a ton of sauce (more than you would normally use). Freeze. Bring to bonnaroo. Put in a pot and devour.
Vegan Delicious Wraps
Get a carnivorous friend to eat the meat from one of the tubs of filling. Fill that tub with tofu chunks and bbq sauce. Freeze before leaving for Bonnaroo.
I just bring lots of fruit, lots of those individual-portion cheeze-its and peanuts (carbs and protein are good for roo), and pre-made pb&j sandwiches (I peanut butter both sides of the bread so it doesn't get soggy over several days). And more water than ever seems humanly possible. If I want a real meal I can't help but go for all the yummy stuff inside centeroo. I find the stove/grill thing too much effort

I'm also a fan of a wrap & the Starkist Tuna Creations. They come in four flavors, easy to open packs that require no draining or opener (or refrigeration). You can add cheese, tomato (salsa), onion or nothing and have a high protein easy meal.
an easy one pot recipe that i use a lot when i am backpacking is cous cous, canned chicken, cheese singles and freeze dried veggis....if you put it on tortillas it is even more filling.

if you bring anything to boil water in: packets of oatmeal, dired soup mix (lipton), and if you really want to be fortified pick up some MRE's from a surplus store, they come with a heatpack to cook with, theyre kinda tedious but you can just bring the whole thing with you and eat parts of it whenever your hungry theyre resealable
