I don't have an exact recipe for it, but sometimes I add a layer of Italian sausage, mushrooms and spinach, and still make a regular meat and tomato sauce with ground beef...it's meaty, but delicious, and it should be pretty easy to modify into your existing recipe since it is just a layer. And to be clear, cook the sausage all the way through (I squeeze it out of the casing so it's ground) and sautee the mushrooms and spinach just a little bit. Then mix the sausage, shrooms, and spinach and make it another layer!

Thanks for the idea! I think I will do an italian sausage lasagna like this, but without the mushrooms (no likey). A few weeks ago I made a spinach lasagna that was pretty awesome if I do say so myself
I have two layers...one w/ onions, brocolli, zucchini, mushrooms, carrots, celery, garlic chopped mixed w/ sauce, and another w/ ricotta, egg, parmesan, romano, and spinach.
Sauce, Noodles, veggie sauce, cheese layer, provolone, sauce, noodles....sauce on top then sprinkle w/ grated parm....heavy saran wrap and foil....350 1 hour.
