I have a vegetarian coming over for dinner and all I have in the freezer is red meat, chicken, and pork chops. I have a load of avocados that need to be eaten soon though. So I am going to make pasta with avocado pesto. We'll see....I've never made it but it can't be that hard.
What will be hard to make is the fondant Dallas Cowboys cake I am making soon.
Thick and cheesy, delicious with a crisp green salad.
8 c. water 6 lg. russet potatoes, unpeeled, 4 diced, 2 quartered lengthwise, then sliced 1/4 inch thick 4 tbsp. butter 1 c. thinly sliced green onions 1 tbsp. Jensen's broth powder 1 tsp. granulated garlic 1 tsp. bacon flavored yeast or 1/2 tsp. bacon bits 3/4 lb. sharp Cheddar, grated (3 c. packed) 1-2 tsp. paprika
Place water, diced potatoes, and butter together in a 5 or 6-quart pot. Bring to a boil, then cook, covered, over medium heat for 20-30 minutes, or until potatoes begin to break down and a thick broth forms.
Lower heat to simmer and add sliced potatoes. Simmer, covered, about 10 minutes, until potatoes are barely tender. Add green onions, Jensen's broth powder, and garlic. Remove from heat.
In blender, blend until smooth: bacon yeast or bits, grated Cheddar, and 1 1/2 cups of the hot soup broth. (Try to avoid using potato chunks for this.) Add blended mixture back to soup in pot, and place soup over low heat, stirring occasionally, until hot but not boiling. This should take only a few minutes. Stir in paprika, to desired color--it is very mild tasting. Serve. Makes 4 quarts. Easy.

I will say my soup turned out pretty awesome considering I sort of made up the recipe. Mine had mostly a milk base but I did add a teeny bit of water and about a cup of chicken broth. I'm having leftovers for lunch today!

That's what I did! I sauteed the onions and carrots in the same pan I made the bacon in.
Went out to dinner last night with m'lady and another couple we're good friends with - I had the grilled salmon teriyaki with rice, plus a side of shrimp dumplings. NOM!

Fresh broiled cod filet, steamed carrots, brown rice and zucchini. Third night in a row I'm eating cod fish. Taking the last of it to my buddies tomorrow and he's gonna cook it up cajun style for Mardi Gras. I think we will be the first people to ever cook cajun cod fish.

I made roast with green beans, potatoes, and carrots last night for Valentine's Day! It was good but didn't have any salt (swelling) so was lacking a bit in flavor.
Tonight I am eating filet mignon & seafood primavera leftover from the Valentine's Day dinner special Dallas' restaurant ran Saturday night. Yum! Oh...and chocolate.....lots and lots of chocolate. I have mini eclairs too.

I had steak tonight as well... but it was a ribeye with sauteed mushrooms, garlic potatoes, and spinach maria.
I also picked up some brownie cake chocolate overload thing from the Fresh Market but I'm not pregnant, I just eat too much corn!
