On a brighter note, I made chicken "cauli-fredo" for dinner! It's a healthy alternative to alfredo sauce made with cauliflower puree! Super yummy!

Cauliflower is amazingly versatile. I've used it as a low-carb alternative for grits with my low-country shrimp. I've never tried it for an alfredo sauce. Great idea!

I'll try that soon. I love cauliflower and can never think of anyways to use it that will make people try it.
