I would be more than willing to take the Pepsi challenge with this method. High heat is generally the way to go with meat, but exceptions can be made. The guy that invented this style was no slouch...

I'd take you up on that. I can see where slower and lower would work if you wanted to cook a steak medium well or well (absolute blasphemy btw). But, for rare/med rare/med with a nicely charred exterior, high heat is the way to go imo. Also, always let your meat rest before cutting into it.

I'd take you up on that. I can see where slower and lower would work if you wanted to cook a steak medium well or well (absolute blasphemy btw). But, for rare/med rare/med with a nicely charred exterior, high heat is the way to go imo. Also, always let your meat rest before cutting into it.
I really think you should give this method a try first. The use of butter and cast iron skillet yield very good results. Cooking a steak on medium would have been blasphemy to me about 2 years ago, but I use this method now whenever I get the chance. Alain Ducasse is one of the top chef's in France. I'd be leery to knock his famous style of cooking steaks before giving it a try .

in super small print almost at the very bottom on the menu I sent you.... "We are not responsible for steaks ordered well done."
these are restaurant-only dishes. there's like no hot dish around at restaurants (I've only ever lived in minneapolis in MN, so I could be wrong about the rest of the state...)
I would rather it be hot dish. having buffet as the favorite is embarrassing.
At least Louisiana is correct. It would be weird if it was something other than Cajun... some of these are whacked though. Makes sense that Colorado is Gluten Free though.
