Omg...THE best thing about jazz fest is that I get to chow down on these glorious bad boys! Sooo delicious! I've even tried to make them at home, but it's just not the same
whats sad is i didn't even get a cochon all weekend. friday night I had a ferdi at mothers, and was pretty much meat poboy'd out at that point. I did have a TON of awesome food at jazzfest, including my new favorite: trout baquet. the best think at the fairgounds IMO. I also had cracklins for the first time (better than any bacon I've ever had), creole cream cheesecake with strawberries (amazing), shrimp n grits, catfish almondine... man i wish I was back at the fairgrounds already.
Damn I love some Walker's BBQ. That was the single best bite of food at the fest. Again. Lil Dizzy's was dishing out huge trout filets for that Trout Baquet. The catfish amandine over at Food Area I was fried perfectly, too. Fireman Mike won Chopped on Food Network a while back. That's who does the shrimp & grits. I was liking the meaty white beans, crawfish strudel, & the pheasant/quail/andouille gumbo this year.
Pro tip for future reference: hit the cracklins stand on the way out of the fairgrounds. They'll hook you up with nice big bag for your $5.
