Grapevine is a great call. A less traditional Motown cover that I love is Discovery's take on I Want You Back
I feel like too many of the covers people are mentioning are just notable for the shock value. Even Cash's Hurt, which is amazing, has the slight stink of of Rick Rubin making some old dude do an album of pop covers for the $$$. The really great covers are ones like Whitney Houston's I Will Always Love You that you forget are even covers in the first place. Hendrix's Watchtower should be on every list too.
I disagree with this. I think covers are appreciated for a number of different reasons. When it's done well, I think the unexpectedness of something can be what makes a cover version great. Sometimes that means taking a crap song and making an awesome version of it (like the Carolina Chocolate Drops version of Hit 'Em Up Style) or just taking an already great song and really owning it (like the White Stripes version of Jolene). For what it's worth, I can say that every single song on my list has been in my regular rotation of music at some point or another.
(For the record, I don't think your comment was necessarily directed only or mostly at my list or anything. I was just using examples from mine to demonstrate my point.)
