So what's everyone thinking here? Carpaccio? Teenager tartare? Maybe a tempura thing with a miso glaze? I'd prefer it be on the rare side, but I'm open to slow-cooking in a sous vide and serving au jus.

its gonna depend on the person, really. If they are athletic, I'd venture to guess their meat would be a bit tougher and would recommend braising to really get it tender. If they're a bit lazier with a nice marbling of fat, just grill 'em up medium.
