Because I'm brining and smoking this year though, I am concerned the brine might make the dressing too salty, and the smoke might make it super smokey.
I wouldn't worry about it being too salty since you haven't started your brine yet and all of that salt should have permiated the meat with only a little remaining on the surface or inside the cavity. don't forget to rinse the bird after removing from the brine though. smoked stuffing is great though! especially if you're using a wood with some apple. I don't know if the smoke would circulate inside the cavity enough to get a really smokey flavor though which is why I suggested a pan next to/underneath the bird instead.
if your stuffing is in there long enough to get to a food safe temp, your bird will be overcooked. There's no sweet spot, either your stuffing has salmonella or your bird is dry.
I dont mean to be contrarian but my experience with stuffing a bird has been pretty positive.
That's an Inforoo take IMHO. How can ramen ever suck unless you're using the shitty $0.29 packets of freeze dried shit? Real [tm] Ramen is delicious.

I had some udon noodles at a chain place in Barcelona called Wok To Walk and it was the only place in Barca I went back to and ate again lol they were really good. Unfortunately I tried something different the second time (a curry) that was mediocre in comparison.
Who does typical and why would they suck? I understand if people are having instant mashed potatoes, canned cranberry gelatin, box stuffing and shit. But isn’t it typically a day when people break out some of their best dishes like shrimp stuffed mirlitons, roasted corn and shrimp soup, crawfished stuffed speckle belly goose, oyster-andouille-cornbread dressing? I love that kind of shit. Again, I’m not interested in slices of Oscar Meyer deli turkey meat or canned yam instead of candied ones.

I'm at the in laws and it's gonna be the most bland Midwestern shiz ever. Probably gonna survive on Coors light and the veggie chili I made a couple days ago.
I typically smoke the turkey, spatchcocked. Best method imo. Plus I grew up with Italian style dressing with sausage, etc so it doesn't go in the bird. Couldn't imagine trying to get an even smoke, tender white and dark, with a whole bird stuff full of bread n shit.
House smells outrageous. That jambalaya stuffed chicken i rotisseried has that spicy brown flavor of Lafayette. That’s one of the best food cities in the south for their own shit. But otherwise damn. Tons of shit. Maybe 9 courses?

Everything was pretty good. Mac and cheese and chorizo stuffing were the highlights. I’m going to make the leftover turkey into a turkey pot pie, and I’m pretty excited about that.
I totally forgot to put out the cranberry sauce so I guess I'll have plenty for leftovers!
Same. Just polished off a slice of pecan pie with some whipped bourbon cream we made. I was telling my buddy I wish I still had the hollow leg I had teens through 30’s when I could eat 5-6 plates of food. But I’m full.

I never even get around to dessert until the following day anymore but a slice of pecan pie sure sounds amazing. The in-laws brought down a chocolate cream and a pumpkin pie so we have a half of each for some point.

Bomb. This one was from La Boulangerie which is a pretty badass bakery here. It took me until after 7 to cram that slice in.
We're all a mess of paradoxes. Believing in things we know can't be true. We walk around carrying feelings too complicated and contradictory to express. But when it all becomes too big, and words aren't enough to help get it all out, there's always music.
Hitting some before bed seconds. Carb load though - mashed potatoes with gravy, sweet potato crunch, smoked turkey and cornbread stuffing and a shrimp stuffed yellow pepper. Mmm
