Also I'm dumping all the extras(sprouts, basil, mint, peppers, etc.) in and squeezing the limes. I have the rest of my Peruvian lunch from yesterday which was the same thing. Scrape all the herbs, onions, peppers and hot sauce into the sopas. And damn that shit was good. Got a half bowl left.

haven't drank in a long time but senior year of high school me and a bunch of miscreants got a house at gulf shores for spring break. somehow what we scrabbled together for liquor and mixers was jim beam + grapico. drank that cocktail for a week. i haven't been able to stomach jim beam since. fun week though.

i would have a hard time choosing between onions, pickles, or jalapenos. lettuce and tomato are unnecessary to me, i'm not against them but they add unnecessary bulk to the burger. a burger should be able to be eaten with one hand IMO.
sautéed onions plus mustard is also awesome, the onions add the sweetness and the mustard adds the acidic hit.

chain restaurant talk, we had a gift card so we went to Outback on saturday. feel like this happens once a year and i'm always impressed with the food then we don't go until we get another gift card. got the prime rib, baked potato, salad. it's not keen's chophouse or anything but pretty damn good food. had plenty of leftovers for a steak sandwich the next day.

When E worked there, he'd often get leftover slabs closing out Sunday. I could eat that shit all day long (though I can't anymore) and like their au jus as well. Maybe they use a few too many dried herbs on the outside, but regardless, it was always good. I don't go eat there, but have had Outback probably 100x. It wasn't always prime ribs of course - might be chicken, kitchen stir fry, hamburgers, ribs, steaks, bread, potatoes or sweet potatoes (which those are pretty good with the vanilla butter or cinnamon butter or whatever it was).
I’m working on some chicken stew. Prep is done except for garlic and multi-colored potatoes. Mushrooms are toasted off. Cubanelle and jalapeño peppers are roasted and chopped. Bells celery and onion are ready. It will have carrots potatoes turnips beets sweet potatoes squash zucchini and the rest of those ingredients plus salt black white and red pepper red wine saffron stock etc. I woke up with literally nothing to do except maybe go see The Floozies for free at 10 tonight. So shit was calling me. I have chili extra virgin olive oil I’m going to base the roux on. Kinda bummed nobody had English peas but you get what you can. Cheers.
Weird fork in the road food day for me today. I am a year in on oat milk and not eating much red meat. I didn’t eat any hamburgers or ground meat tacos but I had some bites. I had allof 3 steaks and that was with Pablo at Hugo’s another place in San Antonio and then some bites and maybe 2 pork chops. I still can’t get 100% away from store fried chicken though it’s less than once a week. Today I had a healthy choice chicken fajita (gave the chicken to Tuxy) with added serranos yellow cherry peppers and avocado. Some mixed nuts. A salad of spring mix with tomatoes avocado and honey-dijon vinaigrette. Then I made some apple blackberry celery carrot cucumber juice and drank some wine. I gotta fast for blood work after an hour or so. But I’m excited to see if this is paying off. As noted I lost a shit ton of weight, so doctor asked me what the secret was. I told her I thought it was better choices. I’d be ecstatic if the numbers are good and I pulled off reducing the fats. But if it’s all genetic and I failed, I agreed to take medicine (lowest dose I can get away with) and will probably still lean closer to my dietary lifestyle as it is now as opposed to eating anything.

I made the beef stew from Once Upon a Chef on Sunday, and we had it for dinner Monday and Tuesday night. It was so good, easily the best beef stew I’ve ever made.

We’re having Italian sandwiches tonight, and I’m pretty darn excited about that.
That looks good. I realize that’s a classic French style so they do it with their typical ingredients though I’m surprised they didn’t call for a heavier red wine. The way I make stew is similar but the ingredients go in differently, and I don’t use sugar or balsamic (will try the balsamic in the future). Since I’ve adapted mine to chicken* I’m using a lot of chilies and then other root vegetables like turnips, bell peppers, sweet potatoes, squash, and beets in addition to carrots and potatoes. Stew rules for sure.
* My yearlong quest to not eat almost any red meat or drink any milk only partially paid off. All lipid trends were good but my LDL and overall was still way too high for my diet. I did some research and found out if you drink a lot your liver won’t process LDL for waste and instead jettisons it into your blood stream. So I decided to hit my doctor up and tell her I’m going in with raw juice every day, 5 cups of green tea, flax seeds and only 1-2 glasses of red wine instead of whiskey and topo Chico and if that didn’t get me where I wanted to be in 4 weeks when I got another fat profile, go ahead and put me on statin low dose and I’ll get back on with life but not as extreme. She said okay but it’s gotta be 2-3 months. I’m only a week in and lost a bunch more weight putting me where I was when I was a sophomore or junior in high school. That’s a cool side effect but unintended. I suppose it comes with the territory eating nuts, avocados, tomatoes and all. I’ve been working out so one thing I do need to get after is more protein. I’ve been looking at a bunch of black bean and chickpea recipes, so I’ll be working those in next week. Fortunately I have two big bags of frozen chicken stew when I gotta have something more substantial than salads or rice and green beans.

Speaking of Italian beef, they're opening two Portillo's locations in the Houston area. Just reported today. Pretty stoked!
Used to love Italian beef in Chicago. I never heard of that place, but the menu looks good compared to similar places. I posted it before but we got a supposedly badass New Jersey sandwich place which used to be a pop up but once they found an appropriate bread source moved into their own location which I’ve read sells out on many days. I’d probably be a regular if I wasn’t on self-imposed dietary restrictions.

I had a nibble on a most stuffed Oreo. It tasted greasy and processed though otherwise like an Oreo. For some reason I thought of Hydrox which my aunt always had instead of Oreos. I could be wrong but I think it might have been Sunshine company (competitors with Nabisco and Keebler) but I gotta look it up to be sure. Fwiw Keebler Chips Deluxe and Chocolaye Lovers Chips Deluxe > Chips Ahoy (with a nod to scratch toll house).
