Fucking right. Low but pronounced spice level. I haven't been since before the pandemic, and eating those wings and that kimchi told me I needed spice, and I needed chicken. We figure they must slit the breasts before brining/marinating, becuase they usually have that little score mark across the breast meat where a little extra spice soaks in.
Being AZ means I get lots of good, legit Mexican/new Mexican stuff. But the barbecue and fried chicken out here is shiz. I miss good southern soul food. There's a lo lo's chicken and Waffles which has a good menu but they know they've cornered the market and are overpriced for the quality.

Have either of yall had Bonchon? Seriously great Korean (twice-fried) chicken chain. Mike of the Doughboys proclaimed it the best chain they've ever reviewed a couple weeks ago. I'd had it before and it'snot super close, but that was enough of a reminder to get some more. They have kimchi and bao that we got, also. My only gripe would be that the pork in the bao bun was more of a pork chop than the very soft pork belly that I'm used to. The chicken is freaking A-1. Both flavors, soy-garlic and spicy.
No. I haven't ever heard of it. I want some, and if I find myself in Houston, I'll hit you up and buy us some.
I actually had a Seoul Burger from Brown Butter Kitchen (Tennessee guys who moved here and opened a Southern kitchen) last night which was a burger with their house kimchi, fried shallots and Korean bbq sauce and got the side of Seoul wings. So I'll eat some Korean. The only random chains we have here is a Pollo Campero (maybe Central American?) which I only went to once and thought it was decent and Gus's World Famous. Popeye's started out here, so that was the main place going 3 or 4 decades back. And whenever Popeye's is on, they're pretty good.
There are some Church's around as well. There's much better fried chicken around as far as restaurants (over Church's/KFC/Popeyes). Like I'd probably vote Willie Mae's a little over Gus's, but they are both pretty top of the line. I had it at Jacques Imo's once, and it might have been the best fried chicken I ever had. Lots of good soul places that know how to cook it as well. And it's great how many different styles there are with wet and dry batters, different cooking techniques (skillet, deep fry), different frying oils, brines and marinades. Haha. I need to stop thinking about fried chicken or I'm going to throw another fucking breast into the air fryer.

I'm surprised with all the transplants to AZ over the last 20-30 years that there isn't some decent Texas bbq or even a regional style of bbq with all the close-by influences - California, Mexico, New Mexico, Texas, etc.) and the availability of all the regional peppers and spices y'all have there. Same for generic regional Southern. I'm sure there's a market for it and that there are probably some good Southern and Creole places around if maybe not every corner, right?

Well, they have Bonchons all over, but it doesn't seem like they have them in NOLA. There are only a couple here. First time I had it for the first time in Virgina, and it was founded in South Korea.

So uh fun story about hot wings..
I was dating this girl in 2015 who worked at a hotel so she had sorta odd hours. The only place we could get both a meal and a drink after 10 was a Buffalo Wild Wings. I tend to get pretty hot wings, like either the hottest or second hottest depending on my mood. This girl did not like that I licked my fingers when I ate wings, which to me is a pretty reasonable way of getting sauce off of my fingers and into my mouth. I mean, they're chicken wings. Bfd. But whatever, it bothered her so I tried to stop.
But that wasn't the worst part. I mentioned that I would get the really spicy stuff, and the thing about that is that even when you wash your hands pretty thoroughly it's hard to get all the way off. So later, when we're doing the sex with the hands in and around the stuff.. I think you sorta get the idea.
So I tried to go the chicken tender route and use a fork for awhile to avoid these issues. Some places might have good chicken-nuggets-tossed-in-sauce, but BWW doesn't. Not for me, lots of breading. They've since supposedly reduced the amount of breading, but it basically seems the same to me. So that didn't last, and neither did the relationship.
Also, I would get the wings that were so hot that I'd be sweating hours later, so this girl thought I was in such bad shape that I'd just start sweating sitting on the couch lol. It's the wings, boo. Chill.
I'm not a fan of Buffalo Wild Wings. I think they're pretty poor. Pluckers (in Texas) is way better if not super great. They do have those giant draft beer mugs with decent beer beyond Blue Moon.
We did Coolinary* last night from Brown Butter Kitchen. It was feed 4 people for $95 (whereas retail per 1 is $39.00). Choices we made were Peachy Gazpacho (lump crabmeat, chili oil, peaches); sous vide pork chops with a roasted sweet potato with pecan butter, sweet pepper chimichurri (which was oddly enough a mayonnaise sauce) and charred spring onions along with a flourless chocolate tort with rose petal jam and vanilla bean whipped cream.
* Since it's too hot here in August, nobody visits. So the good restaurants in town do a Prix Fix 3 course menu that has to be under a certain dollar threshold. This brings out lots of locals on hot nights that they'd usually stay home. For whatever reason, BBK extended theirs into September which was a great deal for us.

They are. And they're not the greatest - certainly not at the level of Bayou Hot Wings. But they're still good. It was always one of the few places in Austin around Memorial Day that we could go watch the NBA Playoffs and eat and drink at by the outside bar and have kids with us as long as they didn't sit at the bar. I haven't been in about 3 years, but there are some new flavors I'd probably try when I go back - Jamango Jerk, Maple Chipotle, Hallelujah, Ginger Peach Sriracha, Mangaerno, Sesame, Gochujang and Spicy Mandarin. Good to see some Caribbean and Asian flavors making their mark there.
Again, I'm not repping for Pluckers or anything. But if you eat Buffalo Wild Wings, you'll find that they are vastly superior. Though born of frat-boys, this is a True [tm] Texas [tm] establishment unlike Buffalo Wild Wings which relocated to Columbus, Ohio at some point back. Columbus is great and all, but Buffalo Wild Wings doesn't represent Columbus any more than Ruth's Chris Steak House shows out for Orlando, Florida.

honey crisps showed up a costco last week. i'm so glad these things exist. so delicious.
the first one i ate when i got home was good, but after sitting out for about a week they got even sweeter. it's the kind of food i need to eat alone because i am going to take big bites and smack and chew with my mouth open to get the full sweetness and tartness. i'm very loud when i eat them and imagine i look like a gross animal.

Yeah BWW is not very good and there's a Pluckers near me now. BWW is pretty much in the Fine category. Tuesday is BOGO so if I ever get them that's generally when. Also, BWW stays open several hours later than Pluckers does, which is the whole thing. I'm generally not taking dates to BWW if I can help it.
I know people who like Wing Stop better than BWW but I don't get it. The Atomic wings are their hottest and they're not very good. It also blows my mind how trash their cheese sauce is that they serve with their cheese fries. Like, worse than Taco Bell or any ballpark/movie theater nacho sauce. Kind of impressive, in a way.
Edit: I don’t think I could be friends with anyone wanting to pick Wing Stop over anything. Check that. Maybe wing stop>Little Caesar’s Wings. But it’s close.

Wing Stop by me is okay. I know it's a Dallas-based chain, but they're usually cooked properly. It's not a go-to place to get them here, but the 3 or 4 times I've had them since the store opened 4 or 5 years ago, they've been edible. I guess that puts them in the "it's fine" category for me. The one time I went to Buffalo Wild Wings, the coating/breading was as thick as the wing (chunk of breast meat) and not very good.
Are chains pretty much the only place you guys get wings normally or has the pandemic spiked your patronage of the wing chain?
I worked at a B&G that was known for its wings for years. Definitely my favorite wings I’ve had, even if they’ve gotten smaller over the last few years. The key is for each gallon of song sauce you use a lb of butter

No. There are too many good places that sell wings around here. Bayou Hot Wings rules. Mopho makes good Asian glazed wings. Boucherie smokes their wings before saucing/tossing as does Brown Butter with their Seoul Wings. Tons of other good places, so chains are only once in a while. W.O.W is sometimes okay and has like a pitcher of beer and 20 for 20/25 bucks.

Interesting. We don’t really have the wing chains here. They try, but close pretty quickly. Only one that’s had staying power is BWW, but they’re up in Clifton Park aka the burbs where only chain restaurants live anyway.
Personally, I prefer a smaller wing. Not a fan of the huge mutant ones, they don’t cook evenly in the fryer and the skin to meat ratio is off for me. HUGE fan of the afterburner wing: fry it, sauce it, stick it under the broiler for a minute. Mmm, so good and crispy.
