I had a really good one the other day from food truck Southerns who I have heard win lots of shit. My only knock was that I prefer breasts to thighs. But I still ate it. I had a good one from Brown Butter last month too with the brioche and pickled collard greens. Fry on that one was pretty immaculate.
This is fair. When we used to eat at restaurants, there were places we wouldn’t order bacon because they never did it right. My husband is the bacon cooker at home, and he’s pretty good at getting it just right.

If yall have First Watch where you are (it's from Florida I think but there are some in my area now), they do bacon pretty well. It's pepper crusted and they put syrup on it and my guess is they bake it. Just the right level of crispness while still keeping some chew to it.
The problem in my house is that my wife likes it carbonized and I like it edible. Also, she gets cranky about the splatters and smell and prefers that we bake it, which makes it hard to get crispy (and really hard to get it to where she prefers it).
Depends on what kind of each and where I'm getting it from. If I'm in Acadiana and get a hot sausage link or piece of andouille, I'll take that over bacon any day. If I'm in Lockhart, TX, I'm going to get a link of Texas smoked sausage. I don't like bacon in most restaurants or hotels (as noted above, they don't cook it right). But I'll eat a BLT sometimes or biscuits and bacon. I find the quality of the bacon usually outweighs the preparation method. Anyone should be able to make bacon easily enough in an oven or frying pan. And if you cook in a frying pan and it's not peppered to begin with, put some cracked black on it (I usually add cayenne too).
In the oven takes a lot longer and does come out more perfect and uniform. Also when it's baked, you can add whatever you want to it and it's going to come out good. Much earlier in this thread I posted a recipe I found and edited a little for candied bacon. That shit rules and is easy as pie.
I can verify that hotel bacon is frequently baked and also frequently precooked commercially and then heated before serving. Always get the sausage at hotels. (We had andouille in our rotation that's really good.)

i love bacon and sausage. we always do bacon in the oven. i like to pull it out just before it gets super crispy, i still like some chewiness to it. typically i put the bacon in the oven while it's preheating to 375. 18-22 minutes, have to keep an eye on it.
unfortunately there is only one specific brand of bacon we really like. i can't remember the name, it was the non-kirkland brand they carried at costco. but post-covid supply has been spotty.
while i love all kinds of sausage we mostly eat Conecuh sausage. there is nothing quite like it and it's delicious. not sure if it's available outside the south?

Tilt-head, it's the 5qt Artisan series I believe. Was really happy to get it for the price I did. Good luck with what Google tells me is the "fattiest pastry in all of Europe".
If you stay diligent you can get a lot of deals of Facebook for stuff like that. You just have to check constantly and jump on things immediately - I made a bookmark of my search and checked it several times a day. This was meant to be though - she was over an hour away and I wasn't going to drive that far, but on the same day I messaged her she had an appointment a half hour south of her at the same time I was visiting family a half hour north of me.
Now I just need to actually make something with it. And get allll the attachments.
Oh I know there are deals, I constantly have to stop myself from buying skates. I should unsave that search. Never thought to look for on of those too be honest and I'm a little jealous. Lol
