I kinda hate Cracker Barrel but what did they expect?
I have only eaten cracker barrel a couple times in my life (because again NOLA doesn't have one even close), but it is ok. Nothing to write home about. I think I always get breakfast foods from there.
Kids are fucking hilarious. Couple notes: Too fizzy?! NEVER Ketchup and ring pops. And the one girl that didn't like anything? LOL
There's a whole other series by a different production company where they try different things as they evolve through the ages. School lunches, prison food, etc from each decade from the 1920's to the 2010's, etc.
I stopped in at Wine Bar on Palafox for happy hour which is half price glasses of wine. I decided to eat while I was there because it’s decent enough. I got the roasted pork tenderloin with pepper jelly glaze, and that came with corn maque choux and braised greens. The tenderloin was tasty but dry. The maque choux was essentially a vegetable seasoned cream corn (had some onions, red peppers and celery but no crawfish). However the collard greens were unbelievably good. I don’t like greens as a rule. But I had to ask the kitchen wtf they did with them to coax out a smoky flavor like that. They told me bacon fat and chicken stock. I knew there was some level of pork in it, but I didn’t guess fat because they weren’t greasy. Good shit.
Viet day today. I found myself on the wessbank and was like fuck, I need Tan Dinh. Shrimp spring rolls and some pork bun and Tom (shrimp) bun. They have the stinkiest nuoc cham going.
I went and hit the Ideal Market this am for some salsa stuff for tacos. Ingredients (minus the spices) are more or less generic this time, but I'm about to roast off those tomatillos.
Edit to say damn that shit was good. I used la preferida taco mix and made one batch of the taco meat with three roasted serranos and one raw habanero. It was fiery and delicious but I could only make some of it that spicy because the salsa was hotter than usual. I didn’t use three of the 8 serranos and one jalapeño. Otherwise I think the heat from the red habaneros pushed it all up to a 3.5 on the 10 scale of heat. Extremely good tacos today. My daughter is like we have this down to a science and could make money. But I’m like this is shit that evolved from family cooking and wouldn’t be right for everyone. Good as shit today though for sure.
friday night had vietnamese for my sister's birthday. delicious bun ca ri from a hole in the wallplace that's been family owned since the 80's.
saturday I had a couple beers and got creative with some southwestern hashbrowns. sauteed up some onions and bell peppers, jalapeno, serrano, chipotle and adobo, and tossed in a can of black beans. lots of garlic, black pepper, paprika, salt. in a separate pan I crumbled and fried some tofu with some tony's creole and some extra cayenne (wife doesn't like tofu, so cooked it separately, but I think this was a good method for getting crispy outside, soft inside tofu). put it all over some crispy shredded potatoes with habanero jack, some tapatio, and some green chimichurri. For the chimi, I combined olive oil, plain greek yogurt, a big ass handful of the gods' herb CILANTRO, a smaller handful of italian parsley, couple cloves of garlic, a couple healthy tablespoons of lime juice, a serrano, and salt and pepper.
one of my oldest friends was in town to visit her mom for thanksgiving and we had a kid-less lunch turned happy hour, new house tour, afternoon beers, etc. Her husband gave me a gummy and told me it wasn't that strong. I'm not the stoner I used to be - I was among the stars. I still whipped up a pretty good thai noodle soup. diced and sauteed a red pepper and onion, some shredded carrots, lemongrass, and ginger. added vegetable stock, coconut milk, pureed roasted red pepper, lime juice, and greens (cilantro, basil, scallions). big scoop of sombal olek for mine. it was perfect for a rainy afternoon snuggling on the couch, testing out the new fireplace, and watching shrek.

We’re laying low Thursday instead of going to the usual family get together. I’ll miss that but the kids said fuck it let’s cook at the crib. I think they are making sweet potato crunch as well as corn, crab and shrimp soup, shrimp/crab/breadcrumbs stuffed bell peppers and shit. I’m going to rotisserie a small rump roast and make mashed potatoes and a heavy mushroom gravy to go with that. I ordered some bomb ass dinner rolls and a bourbon pecan pie from a bomb ass bakery and also have some frozen baguettes from Craft in Pensacola for that soup.
My dad invited himself over for a Thanksgiving I wasn't going to even do. He tried to move it earlier when I only had last Sunday off and am working 12s this week.
So we're having Thanksgiving. I'm doing turkey, Yammy dish, mashed potatoes, green bean casserole and this pepper jelly/cream cheese dip. He tells me he's bringing a Yammy dish... It might be the same as the one I'm making since it was my mom's recipe. 🤣

As usual my sister will make an amazing meal and I will do nothing since we are getting back into town later tonight. And she watched our dogs while we were out of town and without asking she is going to drop them off at our place so when we get in at 10pm our dogs will be there. I have the best sister.

We’re going to my uncle’s which is new for us this year. No idea what the overall deal is going to look like, but my mom’s bringing deviled eggs and pineapple casserole, I’m bringing brown butter snickerdoodles, and my sister-in-law is bringing a cranberry side dish that’s almost like a dessert.

Stuffing is in the oven, first time I've ever made it. Eating it tonight because Mrs. Flair is skipping town in the morning and I'm just going to a Chinese restaurant with a friend tomorrow
Got a stock pot going for shrimp shells. We are using most of the stock I made previously for cream shrimp-corn soup. But we have lots of veggies spices and shrimp shells. So fuck it. Fill the freezer. Also gotta caramelize some mushrooms so I don’t have to fuck with that tomorrow. Random early dishes are being prepped. I burned a dinner roll I forgot was in the oven which hopefully will be the only thing.
Because we're all medical people, my family is doing Thanksgiving on Friday. Not letting that wanting to stop me from overextending myself, my cooking plan is:
-Making a chicken and wild rice soup for my family members who are not working tomorrow -Making a chocolate babka for breakfast on Friday morning -Making a chocolate/caramel tart for dinner
Plus the two apple pies I made for Friendsgiving last week. It's a lot but I'm already letting the babka rise now and I've got the ingredients for the soup laid out already so I don't feel too stressed. Plus, I've got a new tart pan, which I am unreasonably excited about.
