I can't tell if you are joking or trying to earn some foodie style points or something but don't act like there are as many common variations of biscuits and gravy as there are for egg sandwich the way we have it defined, omelet or breakfast burrito.

At least there's a vegan version of biscuits and gravy... from a list dying on the hill of eggs.
I'm voting for Omelet. I am certain that there are great chefs everywhere that prepare them better than what I'm used to, but 4/5 times I get an omelet homemade or at a restaurant it is dry as fuck. I like everything I eat to be wet.
