I voted for hot sauce, but I actually am aligned with you. I eat buffalo type meals often, but don't often use hot sauce outside of that. My cooking has a lot of natural kick and flavor.

I don't find that hot sauce spices food up that much. Its best use is to cut through the richness of rouxs and heavier dishes with the vinegar and little hint of bite and sour. You can spice up shit to whatever level you want. I'm native New Orleans, and we don't fuck around with bitch ass bland shit. Sour/pepper has its usages.
