White potatoes vs sweet potatoes. Which are better?
It depends* on what you are making and if it’s a side, what’s it going with. But just for the record, Mississippi whites are a sweet potato we can get in NWFL (never seen them in New Orleans). I had them at a restaurant once and then saw them raw at Apple Grocery in Pensacola which features a lot of farm grown local produce. We baked them and made a butter-vanilla-cinnamon melted butter sauce. They are delicious as the orange ones.
that’s just when you eat a baked potato and then drink sparkling water an hour or two later so when you burp it’s potato-scented
Flavor savors (Kev bot has been trying to get them back to Bonnaroo for 10 years.). I’m a big fan of potato buns as well since they were introduced to me when burgers elevated in I guess what must have been later half of the 2000s. They aren’t greasy like brioche buns (which I also love but am getting too old to eat regularly). Not sure about gluten or nutrition but they seem to hold up well especially if the burger, sauces and accompaniments are wet.

Potato flakes are added to the dough along with potato flour resulting in a subtly sweet, structurally sturdy burger bun with a longer shelf life than other buns. Another added benefit is that they're dairy and egg-free, meaning your lactose-free customers will be able to enjoy your burgers too.
Peru is the king of potato varieties. I think they have over 3000 varieties (…genus, species, variety…). I’m super partial to purple Peruvian potatoes. But I don’t know which varieties they have at the grocery that carries them. You know they’re good for you. I think they have almost a rainbow of colors of Peruvian potatoes. Perhaps in the future some of those varietals will become endemic heirloom products in America so more people can try them. I’ve had some deep yellow ones at a local Peruvian place too. Delicious.
