I'm gonna make some cajun catfish on thursday night in VIP. Pan-fried on the grill. Recipe is secret. If you're in VIP, look for Middle Tennessee State and University of Louisiana-Lafayette flags. I'll more than likely have plenty to go round if your timing is right.

For any of you planning on grilling steaks at Bonnaroo or at home, here is the best seasoning mixture for steaks. This is what they used at the steakhouse I worked at which was owned by the guy who created Del Frisco's. Kosher Salt is the Base, add black pepper preferably cracked or not powder form. Add a dash of Cumin Paprika and White pepper. Rub the mixture in before grilling and the steaks are phenomenal. Add a slice of butter on the steak when your done if you want. Kosher Salt is what makes the difference when cooking, it brings out the flavor of foods without overpowering it. My plan this year is to grill a bunch of fajitas. I live on the Mexican side of town, and the Mexican grocery stores have preseasoned Fajita meat. Its awesome. I am hoping I can grill that up after setting up camp Thursday. Fajitas are best in Texas, I will bring them to Tennessee.
*i like coconuts, you can break them open they smell like ladies lyin in the sun** *Hell I don't even know where I am** *for now I must sit here and ponder the yonder: The herbivores did well cause their food didn't never run** *We listen, if it feels good We shake** *You made a big impression for a girl of your size, Now I can't get by without you and your big brown eyes.**
Here's a link to a ton of vegetarian recipes. I don't think we'll be doing any cooking at Bonnaroo, but pasta salad, cheeses and assorted flatbreads and crackers, fruit salad, hummus, etc. will all be in the cooler.
