Kind of a spin-off the 3 favorite live albums thread: I'd have to go with (in no particular order): Neil Young "Unplugged" Warren Zevon "Learning to Flintch" Plant & Page "No Quarter: Unledded" (I know it's not totally acoustic) I still listen to all 3 of those albums with some regularity.
Excellent choices. Yeah, once I started really thinking about it: Alice in Chains Unplugged, Bob Dylan Unplugged, Nirvana Unplugged, Widespread Panic "Uber Cobra", & Al DiMeola, John McLaughlin, & Paco DeLucia "One Night in San Francisco" are pretty good acoustic albums too.

1.Neil Young - Harvest(Great album for anytime, Neil Young at his best...) 2.Nick Drake - Five Leaves Left (any Nick Drake album could be put here really but this one has personal hold for me, the man never made a bad album in his short career) 3.Nirvana - Unplugged (Really shows Kurt Cobain at his most relaxed -even if he was freaked out-, I actually have the taping of this too, and I love it)

Not sure what constitutes an "acoustic" album-- is it a type of live album, or any album that just uses acoustic instruments, or an album centered around the acoustic guitar?
I kinda feel the first is too narrow and the second too broad, so I'll assume the 3rd (looks like most people did as well). Here would be my picks, mostly off the top of my head:
1. Ry Cooder & Vishwa Mohan Bhatt - A Meeting by the River 2. Robert Johnson - King of the Delta Blues Singers 3. Paul Simon - Paul Simon (admittedly a stretch)
Leo Kottke gets the lifetime achievement award, too.
The Nightwatchman - One Man Revolution Collective Soul - From the Ground Up Rodrigo y Gabriela
Also, Skin and Bones by Foo Fighters is good. And if DVDs counted, I would replace From the Ground Up with the Music In High Places Collective Soul Live In Morroco DVD soundtrack.....absolutely incredible!! If you like acoustic music and exotic locations - check out this DVD. One of the best of it's genre I have seen.

Bob Dylan - The Times They Are A-Changin' Bob Dylan - Another Side of Bob Dylan Neil Young - Chrome Dreams (an unreleased follow-up to Zuma -- includes acoustic takes of "Powderfinger", "Captain Kennedy", "Too Far Gone", "Give Me Strength", "Hold Back The Tears", and many more unreleased Neil gems. These tracks are simply breathtaking, Neil would never be so personal again after this record. It's suggested in "Shakey: Neil Young's Biography", that he didn't release this record because the songs were just TOO personal -- most were inspired by his failed relationship with Carrie Snodgress. This is debatable, but I believe some of Neil's best work can be found on this one bootleg album.)
