I have heard some of their stuff, but not sure where to start as far CD's go. I am also trying to put a list together for my gf so she has an idea what to get me for Christmas.

^^^Funny, that's my least favorite album! But here's how I'd put it: "Uninvisible" is the least jazzy record. It comes rather close to the funky, spacey, bordering-on-hip-hop-and-electronica sound of Galactic. So it very well may be what you're looking for. They get jazziest-- and most experimental-- on their acoustic albums: "Notes from the Underground", "Farmer's Reserve" and "Tonic". So, I guess I'd say a good place to start is right in the median: go for their albums that run the gamut from freaky jazz to straight grooves. Namely, "Combustication", which heavily features DJ Logic, and "End of the World Party (Just in Case)". You certainly can't go wrong with those!
oh yeah, one more thing I was reminded of while retrieving those images... if you're into used CDs, Amazon has nearly all the MMW catalog for CRAZY cheap. I'm talking like $2 or $3 a pop (plus shipping). It's the way to go!
"Shackman" is my favorite album and a great place to start. Also, "Last Chance to Dance Trance (perhaps): Best of 1991-1996" is where I started. It's a really good place to start because it covers 5 years of their music. I would wait on discs like "Tonic" until your familiar with the band. While it's a great album, I don't think it's very accessible if your not pretty familiar with the band already. Just my opinion though.
Uninvisible is a little more listener friendly and is a good album to ease you into the world of MMW. Two more greats are End of the World Party (Just in case...) and Tonic, which is a compeltely acoustic album and theres a version of Hey Joe on there that is so fuckin smooth.
