If I don't get working on dinner, gonna get kicked in the head, so tonight I'm making chicken and dumplings. Have a raging sinus infection, and need some comfort food.
I was off yesterday, and was in a fog w/ no external assistance. Apparently cleaned, did laundry, and made bbq, don't remember squat. Squad came home and I was out. Lots of hate this am, still sick as a dog, but at least not so foggy...needed a simple meal that they will attack so I can hit the sack soon and recover for Buddy on Friday!

chicken and dumplings are one of my favorites..along with any other meal involving noodles and a crock pot.. ie beef and noodles, chicken and noodles....but im thinking chicken and rice in cream of mushroom soup

this is the best thread ever. i am always needing inspiration. i would prefer a more specific thread i can "feed" off of.. like "hey vegetarians.. what's for dinner?"
anyway.. i had a black bean burrito.. picked up on the way home .. cause i didnt feel like cooking. so not worth the 7 bucks.

Cooking is so not hard, just a little planning and prior prep are all that's required.
Oh my gosh! We so need an Inforooster's Cookbook! And it could have a special Roocipe section!

Im on another message board that does this....its pretty funny but useful. But you have to show pictures of the process as it goes....its a cooking for dummies thread. Ill find the link. We should totally do this here.

So, I ended up making a Citrus Chili Chicken.
I'll start the recipes!
Makes enough for 4 breasts or 1lb of chicken
2 tablespoons bitter orange marmalade Zest of 1 lime Juice of 1 lime 1 tablespoon Siracha (or more or less - depending on your tastes) 1 tablespoon Hoisin Sauce 1/4 cup Pear Nectar 1 tablespoon freshly grated ginger root
Mix and marinate your chicken (or pork or tempeh) for 30 min and then grill!

How fun! I ended up modifying what I'm making tonight, because it just sounded so boring when stacked against ya'lls.
So, I ended up making a Citrus Chili Chicken.
I'll start the recipes!

2 tablespoons bitter orange marmalade Zest of 1 lime Juice of 1 lime 1 tablespoon Siracha (or more or less - depending on your tastes) 1 tablespoon Hoisin Sauce 1/4 cup Pear Nectar
Mix and marinate your chicken (or pork or tempeh) for 30 min and then grill!
didn't cook the chicken first, browned some onions and garlic first, then added chicken breast 2" cubed, then the dumpling, then box low sodium broth w/ 2 cans of veggies.
