I made a zucchini lasagna last night. It was pretty good but, as expected, the zucchini doesn't substitute well for noodles. It really ended up being a big ol mess on my plate, but it tasted good, so I wasn't too upset.
I may try some gluten-free noodles next week, just to see what they are like.

I'll spend an entire Sunday making like 20 and eat them for lunch every day. I even took some to Roo a few years ago.

When I make Yooper pasties I have the standard beef and veggie ones. My wife and I made some brocoli, chicken, cheese ones last weekend. They were great!

Monkybunney's Promethean Chicken Wrap
Mission critical ingredients:
Chicken Breast Bacon Monkybunney's Stolen Fire Spice Mix (see below*) Tomato (dice it yourself, NOT CANNED) Red Onion Dried Dill Blue Cheese or Ranch dressing Tortilla (10" or bigger for best results) Extra sharp anatomically correct Cheddar Cheese Extra Virgin Olive Oil
Not Mission Critical ingredients Lettuce or spinach Anything else your heart desires
*Monkybunney's Stolen Fire Spice Mix:All measurements are more or less heaping portions 1 Tablespoon Chili Powder 1/4 Teaspoon Granulated Garlicgarlic powder will work but cut back on the salt amount 1/4 Teaspoon Dehydrated Onion (ground into a powder using a mortar and pestle. Onion powder will work but again use less salt 1/4 Teaspoon Crushed Red Pepper 1/2 Teaspoon Spanish Smoked Paprika(regular paprika will work as well but smoked gives more depth) 1/4 Teaspoon Dried Oregano 1 & 1/2 Teaspoons Ground Cumin 1 Teaspoon Salt (I use Kosher but whatever) 1 pinch the size of your choosing of Cayenne Pepper 1 Teaspoon Fresh Ground Black Pepper(When I say fresh ground pepper I mean it! Go buy some whole pepper corns and ground those fuckers by hand using a mortar and pestle. This is the single most important ingredient in the stolen fire spice mix. I swear to god DO NOT fuck around with this step! Grind the whole pepper corns BY HAND using a mortar and pestle. If you don't have a mortar and pestle use a hammer or something then go buy a mortar and pestle tomorrow. EVERYONE should have a mortar and pestle in their kitchen!)
How it's done: Dice up a tomato or two and sprinkle some dill on it. Use your intuition. Mix it up with your hands. Let that sit for a little while. 10 minutes, an hour, what ever.
While the tomato and dill are feeling each other, blend up the spice mix. Just put all those ingredients in a bag or bowl and stir/shake. Fucking grind up the pepper corns using a mortar and pestle.
Dice up some Red Onion.
Shred some cheddar cheese.
Put one scant tablespoon of Stolen Fire spice mix per chicken breast in a resealable plastic bag (1 qt freezer bag, a sandwich bag, it just depends on how much chicken your making.) Put the chicken in the bag with the spice mix. Shake the fuck out of it.
Cook some bacon and put it on a napkin/plate to absorb the grease.
IF your like me and don't like to use allot of dishes that will have to be cleaned later you can re-use the bacon pan to cook the chicken. Drain the grease and just wipe it with a paper towel. Pour a liberal amount of Olive Oil in the pan (Otherwise get a new pan and put olive oil in it). Set the heat to medium high on your stove top (I have a glass top stove and I set it to 7) and when the oil is hot drop the chicken on it. (You can tell when the oil is hot enough by getting a little water on your finger and flicking the water into the pan. If it sizzles your good to go.)
THIS PART IS IMPORTANT! Cook the chicken on one side for 2 minutes. Flip it over and cook for another 2 minutes. Repeat this cooking for two minutes on each side for the next 12 minutes (6 flips). The reason for fussing over the chicken like this is because if you just cook it on one side for six minutes then the other side for six minutes you end up cooking all the juiciness out of the meat. By constantly flipping it you cook the chicken and get it hot enough to kill any nasty microbes while not evaporating all the deliciousness from the meat.
Cool huh? There will be allot of smoke. Turn on the oven vent or have a fan handy and an open window. The spice mixture will blacken into a crust. This is a good thing!
When the chicken is done let it set on a plate for about 5 - 10 minutes then cut it into tiny pieces.
Required assembly:(this part is a matter of personal choice so you can do it anyway you want but this is how I roll!) Place the tortilla on a plate and heat it for 45 seconds in a microwave.
Slather some Blue Cheese or Ranch (or both!) dressing on a side of the tortilla.
Put half of the shredded anatomically correct sharp cheddar cheese on top of it.
Put some Promethean chicken on top of that.
Put some bacon on that.
Put some diced dilled tomatoes and diced red onion on top of that.
