I have had them many many times. Seems like the guy is always in ATL for new years. They are really just a big wrap with veggies and stuff with falafel inside and then deep fried. He also does them without the falafel so its just like a humongous eggroll.
I make something called Lumpia (it's Filipino). It's an egg roll wrapper...heavier than a spring roll wrapper...with shredded carrots, cabbage, potatoes, onions, French cut green beans, pork or shrimp and garlic. Brown the ground pork with the garlic and onions, then drain it in a colander. Smother the veggies down in water until tender, then drain. Mix the pork (or shrimp) with the veggies, then roll in the wrappers. Seal the edge with a bit of water. These can be frozen, too.
My guess then is that you'd have to make the wrapper by hand (which my mother does anyway) to get a very large wrapper. It's not hard, but it's time consuming.

I LOVE Lumpia - the wife of an old boss was Vietnamese and she used to make these for us

dude that does sound awesome...both times ive seen the stand its been the same guy. he offered my bro and me free beer for the rest of the weekend at roo 05 if we roughed up his "pain in the ass 13 year old step son" (guess he sucked at making rolls). then i saw him at a phil and friends show in nj 2 years later and told me that offer still stands. if you ever see this guy go bullshit with him cuz hes funny as hell
sounds likean old friend who used to do 'fattie eggrolls' on dead tour years ago but I know he stopped or at least I think he had I have not talked with him in 7-10 years now. I have made thousands of different eggrolls/springrolls in my day ( I am a professional chef) and truly love them. They make for wonderful festy food: eat on the go, tasty, nutritious (if laden with veggies) even though it is deep fried, filling. Of course these can be made to your personal preference just throw in whatever veggies and/or meat you like the most important thing is to drain the excess liquid or it will sog out your wrapper and won't fry up right. Yes the duck sauce makes it really yummy also try soy, sweet soy (soy sauce and sugar equal parts heat to dissolve sugar), and so many others I will not get into right now.
I don't care what you say about me, just spell my name right---P.T. Barnum "As I was walking up the stairs I met a man who wasn't there He wasn't there again today I wish to God he'd go away."
so tomoro i am making an egg roll kinda thing. using egg roll wrappers, and putting stir fry veggies and chicken in them. and teriyaki sauce. and then baking them. sound like a tasty plan?
