i'm going to be camping out for starting tuesday, since i am volunteering, and the vendors won't be set up for 2 days...i plan on eating most of my meals for the weekend at my camp and will not be bringing a grill...anyone have any good suggestions about what kind of food to bring for light but filling meals?
One pot meals are the best. They are less complicated and require less clean up. Things like Zataran's Jambalaya, dirty rice, etc. or spaghetti, chili are good. Freeze your meats or just bring cooked meats like keilbasa which hold up well in a cooler. Or if you have no stove, you can always just bring canned food like soups, or ravioli or eat lunch meat or hot dogs.
You can get more complicated but you can make great meals with little work in a single pot. Bring a couple veggies (peppers, onions, celery) to spice up the boxed meals and you're set.

Jimmy, what section of the AT are you looking at doing? I'm super interested. Have you read A Walk in the Woods yet? Checked out JP's awesome AT thread on here?
