i googled around and found this recipe : Ingredients: Tortillas Baby spinach Fresh sliced and peeled tomatoes Olive Oil Butter Sliced / crushed garlic pine nuts Fresh pesto (if possible) Fresh sliced Mozzarella
Prepare your tortillas. Cover half the tortilla with spinach, tomato, garlic, pine nuts and sliced mozzarella. Drizzle on the pesto sauce
Heat a large skillet with enough butter / olive oil to cover the bottom.
Place the tortilla in the skillet and fold in half. Flip over after a minute or so...Should brown quickly. Press and remove to napkin or paper plate to drain. YUM!!!
Weren't they the best? All the stuff at Bearly Edible was awesome, and cheap too.
I too planned on adding those to the dinner repertoire.
The guys at Bearly Edible laid down a bed of shredded mozzerela on the tortilla, followed by diced tomatoes, a little baby spinach, and really good pesto sauce. Heat, fold, heat some more, voila!

Hi all, long time lurker, first time poster, 3rd time rooer.
I worked with Bearly Edible the last two years, that's the dollar grilled cheese and mozzadilla place in Centeroo and Pod 3.
The pesto mozzadillas contain mozarella cheese, made-from-scratch pesto, spinach, and diced roma tomotos. They are quite yummy.
I had a blast feeding all of you this year. I hope my loud mouth didn't piss anybody off too much, I'd like to think that it's all part of the experience. Meant in good fun and nothing else.

Haha, I honestly feel like Bonnaroo inspired my love for grilled cheeses. I have been trying to recreate the pizza grilled cheeses I had in 2006 for a year and a half now. Somehow, they're never as good. I think it's just something about being on the farm!
Ugh... As long as it wasn't the lemongrass mozzadillas. They were horrible!!! I dunno if they didn't cook down the lemongrass long enough to break it down, but something was way off. I did have some other kind of quesadillas that were really good though.
Bearly Edible were not the lemongrass dillas, all BE's stuff was great. Veggie Dillas, Sesame Ginger, Garlic Grilled Cheese and Green Curry Tofu.
Somthing funny:
At one point a half hour after eating a pesto dilla, things started getting..weird...and I convinced myself for a few minutes that the pesto that morning was electric!!
The name is "BEAR"ly Edible, of course. I thought Owsley was up to his own trips, er, tricks again.
Then I remembered I might have something else in my system from earlier, and i wised up.. ;D
This man came up to me just the other day, asked me I'd been born again. I told him, "I didn't think I had." That I had been rejected. But I think, Hell's got all the good bands anyway. And Bonnaroo.
I want to replicate the stuff I had from Outback Kates in Centeroo and think I will this weekend - yellow rice, black beans, grilled veggies, pico de gallo and sour cream

The grilled cheese prices were strange. It was $1 each, but if you bought more than 1, they threw on an extra $1.
So, 1 for $1 2 for $3 5 for $6
179 for $180
and so on
They weren't cheating you, just a funny pricing system.
(Other funny food options in Centeroo: Fries in a waffle cone?? and the tropical drinks were $7 each, but $4 refills, but the long glasses were so fruity looking you were too embarassed to keep them and had to throw them out)

We impose a $1 "Bonnaroo tax" on multiple grilled cheeses. Food vendors are required to buy their supplies directly from Bonnaroo at inflated prices. As a result, we had much narrower profit margins on a $1 grilled cheese than at other festivals. Hence the tax.
