Thank god. That other ex is the wurst. This sorta-still-bf I'm talking about now is wonderful. Very sad he's moving, but I knew from the start of dating him that he would be, so. I usually am not into dragging something out if you know you're going to have to break up, but since this is 100% by way of circumstance (aka 100% by way of him moving to the opposite side of the country imminently) and not any issue of like compatibility or not wanting to be together anymore, we are both happy to do the sorta lover thing until he actually moves.
Do I make a pie crust from scratch or can I buy one? Will I be able to make the lattices on top of the pie pretty enough? These are the important questions.
Scratch. It's easy and you can do it ahead of time. Latticework is easy. You just have to pay attention while you do it.

You make the shit from scratch! And don't bother with lattice crust, it's such a pain in the ass. Make pretty leaf cut outs or something to decorate the top.
Edit: I should also add that I am somewhat of a pie purist. Simple crust, simple filling. Lattice is for blueberry or strawberry rhubarb. Apple gets vented and egg washed.

And if you've used a thickening agent (like flour or corn starch) that trapped heat will help activate it much better so you get a nice gooey liquid instead of watery mess. You don't really need that with blueberry pie, since you've already heated the juice and thickened it on the stovetop (at least that's how I make it).
Corn starch won't thicken anything unless the mixture is brought to a boil. Flour you have a little more leeway with the heat. It really just needs to be brought to a simmer.
Edit: One more thing! I think apples are too close in color to the crust, so when it's latticed you don't get much of a "pop." The clash with something deeply colored like blueberry or cherry makes the pie really stand out.

If you make a crust, do a half butter, half shortening recipe. I'm personally not crazy about that serious eats recipe goldbees posted, and if you're making an apple pie mix in some vinegar instead of the vodka. If you buy one, buy the crust that doesn't come pre-shaped to a pie tin, but is in a little box.
If you want to make a lattice top apple pie, mix in apple sauce with the filling to help the apple's soften, and top with some sort of oatmeal butter crumble so it browns up nicely and avoids the bleh color Kait was talking about.
