The two most famous are Rendezvous and Neely's Interstate BBQ, and they are both delicious. Rendezvous is downtown, with a nice dry/wet combination, giving you the best of both worlds. Interstate's main location is a little further out, with a more traditional wet bbq sauce, and even has locations in the airport. I've only visited Memphis, so maybe some locals can tell you about some lesser known gems, but I don't think you can go wrong with either of those two.

Rendevouz. When there is an hour and a half wait at 10am, you know they're doing something right.
Also Bonnaroo is closer to Nashville than Memphis, by about three hours. In Nashville, I haven't really dug too much into the BBQ scene, however Jack's is great. I would look up this little place called Monnell's. I've had my last supper there each year I've gone.
I grew up in Memphis, and Rendezvous is what you want. The dry-rub ribs......mmmmm. I bring them with me back to Indy whenever I make it home. It's all you can smell for blocks around the place. The entrance is in an alley, so you'd park in the garage next to it.
Slick pig has a Memphis style BBQ joint in Murfreesboro. They are the best around and while it may not compare to actual Memphis BBQ it is still awesome and only thirty minutes from Manchester.
I don't eat BBQ, but living around memphis all my life, I know that the general favorites are Rendezvous, Corkys, and Interstate.
Rendezvous was always everyone's choice for ribs, and Interstate or Corky's was always everyone's choice for everything else.
Charlie Vergos, the owner / creater of Rendezous died a while back, and some people have said that the quality of food there as fallen off since. That may help you make your decision.
Also, consider hitting up Gus' World Famous Fried Chicken. It truly is the best chicken you will ever eat.
Gus' chicken has moved to Memphis from (i have forgotten where) because their original building burned down. It's right off of 40E if you're coming through town, on the Germantown Pkwy exit. If you decide on chicken, Gus' Chicken is where it's at. It's really good cold-I've gotten it to eat on the road back to Indy before and it's cold when I dig in but oh boy! is it tasty.
Central BBQ in midtown. (Central and east parkway The BBQ Shop in midtown. (Madison) Cozy Corner near downtown. (North parkway) Blues City Cafe downtown. (Beal st.)
And Gus's fried chicken downtown. (Front st) ....is a must

Gus's Fried Chicken's original location was, and still is in Mason Tennessee, not too far from exit 35 on I 40. The building burned a while back, but the original location was restored and is still in business.
The real reason the other locations opened was because Gus died, and his wife didn't want to try running the business by herself. There is still only a few people who know the secret seasonings and batter that Gus's use, and as I understand it, the owners / managers of the other restaurants are not in the know. I have been told that they (the owners / managers) still have to come to Mason once a week to get the seasoning and batter. I have a friend who's aunt manages one of the restaurants.

Memphis native here as well.
Central BBQ (all-time favorite) Jim Neeley's Interstate BBQ (sandwich as big as your face) Cozy Corner (in the hood, but their BBQ game hen is the bomb) Rendezvous (awesome ribs, long wait, last I checked only open for lunch on Friday)
Gus's (as previous posters said: fried chicken that will ruin any fried chicken you will ever have in NJ)

That's the one! Criminally overlooked by tourists coming to Memphis to eat BBQ.
Hands down my fav! We discovered this since its just down the st from Minglewood hall back on um ter in 2010. Havent forget it since! Owners serve us themselves. Awesome place, we are makimg a stop on our way from dallas fo sho
Payne's BBQ is the best pulled pork in Memphis. It is only open til 6pm. If you do go, lock your vehicle and don't have anything of value sitting in view.
Rendezvous is inconsistent. It can be very good or dried out.
I agree with the people who mentioned Interstate and Cozy Corner. Both are very solid.
In Nashville area, I like Slick Pig (Murfreesboro), B&C BBQ (Nashville), and Martin's BBQ(Nolensville). All three have their own specialties but are good.
