I don't know if you are old enough to remember it, but it reminded me of Dope Wars back in the day. No graphics and very basic concept but somehow highly addictive.

Can someone explain laundering to me (in the sense of this game)? What's important about that money stashed away? What does it get me or what can I use it for?

You have to maintain a certain percentage of laundered money vs. total money otherwise your risk of an IRS audit rises which I assume would end your game. I found this out when my IRS risk suddenly skyrocketed to ~50%.
Ok... I've been doing that, but actually that post did help. If you don't increase your laundered money, you'll end up losing your actual money. I haven't lost money since the first 20 minutes

Yeah, the amount of laundered money you have is right under your total money on the left toolbar. I don't know what the percentage is, so I just monitor closely. In general, the game is about balancing laundering, distribution and manufacture.
For the first few hours I thought that the laundered money was actually being taken from my money (until about an hour ago), but that ain't so. I haven't let myself buy anything which would drop my account below the laundered account amount because I thought I was losing my own money...
