What are you packing?? I'm realizing that a lot of my meals need to be cooked and I was just wondering what are some easy to prepare meals that are still filling!
I pack trail mix, cliff bars, peanut butter pretzels, hummus/salsa and chips. I usually have sandwiches for lunch/dinner. usually avocado, tomato, and veggies.
We have a camp grill and live on veggie dogs. Veggie sausage in the morning. Pasta salad (Italian style, not the macaroni/mayo kind). Almonds infused with coffee as a healthy pick-me-up. The aforementioned trail mix and, new this year, my sister's homemade Chex mix. PB&J.
The vendors are really great too - so many options! Buffalo tofu wraps by the What Stage, the quesadilla/mozzadilla/fetadilla stand on the main strip in camp, spicy pie galore, jalapeño veggie corn dogs, arepas, veggie red beans and rice, all sorts of Asian options. Never been to the acclaimed samosa man stand, but everyone raves about him. It's been worth us packing less and saving up to spend more vendor food to avoid missing shows.
Festivals are GREAT places for vegetarians! I eat better at festivals than I do at home. YOU GUYS ARE MAKIN ME HUNGRY!!!
At the campsite I ear a lot of plain yogurt with fruit mixed in, and lots of cheese (no vegan here--can't live without cheese!) I bring a coleman stove so I do a lot of grilled cheese sammiches, and if you can find local tomatoes in season they are HEAVEN added to the grilled cheese.

Yes! All of the above are good tips. I also pack fresh pre-cut fruit (watermelon, strawberries, and blueberries). String cheese fares well in the camp cooler too. My brother brings Cheerio bars (like Rice Krispie treats but with peanut butter and honey so they pack extra protein). And I count my Bloody Marys as a vegetable serving to balance out all the Spicy Pie and Goatacado Mac & Cheese I eat.
Emphasis on the pre cut part. It's so easy to keep a healthy flow of energy into your system when all you have to do is run back to camp and start piling the fruits and veggies into your face hole.
Having a cooler full of chilled, ready to eat rabbit food has made so much of a difference in my experience.

Thanks everyone! For some reason all I was able to think of was nuts and hard boiled eggs. I wasn't thinking fruit would work well in a camping situation. I have awful blood sugar issues that don't work well with me not eating meat(too much sugar and carbs and not enough protein and fat to level it out) and in the heat I'm prone to passing out! I've never been to bonnaroo and I think I'm stressing more than I need to on making sure I'm not miserable haha.

I make a big batch of pasta salad with loads of fresh veggies right before I leave and pack it in individual size containers and eat it twice a day. (I bring grape tomatoes to mix in as I eat, they get a funky texture from the cooler.)

I'd bring you some tomatoes from my garden, but they're off to a slow start this year.
