Food in both directions! I always buy a crap ton of food and then don't end up eating most of it and wishing I'd brought something else instead.
Pretty much exactly what I was going to post. Also beer - I never end up drinking much of it because it's so hot. I'd rather wait til later in the evening and drink liquor instead.
I've always brought shade for camp and plenty of water, but if I didn't I'm sure I would've wished I had.
I also usually end up wishing I'd brought some neat clothing for night time, and a portable potty for camp when I wake up and have to practically run to the portos to pee.

This! The portable potty is indispensable in the middle of the night/early morning when you just don't feel like making the walk to the Porto Potties! But,please, dispose of the used bags properly!
Not an exact answer to your question, because I'm married to a list queen, but here are some important things that are easy to forget.
First and foremost, don't forget your wristband Warm clothes or blankets for night Poncho or Garbage bag poncho for rain Extra socks and underwear You may want swim shorts for the mushroom or water slide in Centeroo Something waterproof to put your phone in Sunscreen Baby Wipes (shower) Deodorant Toothbrush/Toothpaste/Floss Ear plugs Excedrin Tums Aloe (even if you don't burn, someone else will love you for bringing it.) BYO TP Battery powered Fan (for A.M. sleep) Flashlight
The thing I brought 3 times that was a waste of space 3 times was a tent. They're miserably hot in the morning. Sleeping under a canopy is way more comfortable.
