It totally feels like cheating, but the Morningstar chicken nuggets are pretty legit too. I have some fake bacon that I'm timid to try - that seems tricky - but idk.. these meat substitutes really aren't bad at all. I was pretty anti- on the fake meats, I guess because it *feels* weird and like I'm cheating compared to tofu or tempeh, and I don't really know how it's made or I couldn't do it myself, which is some weird mental block I have, but it's all basically as good as any other frozen food lol. Got some vegan egg rolls as well from some other brand. Also good.
Probably gonna cheat a little this weekend, because we might be on the road visiting a state park, but I'm not really freaking out about any cravings. The BBQ Bacon Burger from Whataburger looks pretty nice in the ads, though, ngl.

For the most part, Morningstar Farms was my go-to for meat substitutes. The buffalo nuggets (tossed in wing sauce and dipped in blue cheese) were great. The crumbles made for decent tacos. The chicken patties, black bean burgers, and sausage patties were all good. The bacon... was not.
Amy's does a lot of great veggie stuff. I used to do the cheese enchiladas and chili on a weekly basis.

? Do you not regularly eat scallops or order them at good restaurants? I don't like bay scallops, I just like the big circular ones (fucking phrase damnit) like the ones you can get at Whole Foods. A perfectly cooked scallop really depends on what you're cooking. They are different in so many different dishes. Shit I once had oatmeal crusted scallops with a maple sauce at Graham Elliot's in Chicago when that was still running. I've had them blackened, pan sauteed, braised, etc. To me, they are cooked perfectly when the top and bottom have a light crust, and the inside is just barely cooked through. You should be able to go through them with a fork with very little effort. They don't quite melt in your mouth when perfectly cooked, but it's close to that when done correctly. Not sure if that makes sense so if not, the inside of the cylinder should be pretty soft but not raw.
for veggie tacos, this trader joe's chorizo is the best. much better than any of the fake beef crumbles. i throw it in the cast iron with the onions, peppers, corn and everything else and add black beans into the tacos too. it makes enough to feed two of us for at least two meals and is delicious.

We've been eating the morningstar spicy black bean burgers for years , since before going veggie. They're great for a quick and easy patty melt, but don't really scratch the burger itch. I do impossible or beyond when I'm craving a burger; the Fry's near me (kroger) just rolled out their store brand "impossible" and it's just as good. Really only use it for burgers though, the texture doesn't really work as "ground beef" in my opinion.
Lightlife has my favorite "ground beef" crumbles that I use for tex-mex style tacos (or crumbled tofu with chorizo seasoning) and their tempeh is pretty good too.

Texture is a part of taste. Ever have under- or overcooked rice? Exact same flavor as well-cooked rice, but a very different texture. Go too far in either direction and it becomes inedible.

The only thing that can make me gag is smelling or watching someone eat egg salad. To me, it's the epitome of the most putrid combination of ovum yet concocted. I don't like eggs because it's all I ate the first 5-6 years of my life. Then I got sick one morning and never could go back.

Texture is a part of taste. Ever have under- or overcooked rice? Exact same flavor as well-cooked rice, but a very different texture. Go too far in either direction and it becomes inedible.
Rice doesn't taste the same to me if it's undercooked vs. properly cooked. I find it super starchy if it's undercooked to al dente. Texture is in people's heads just like smells of food are in mine. It's straight up mind over matter - but of course I often fail.

I love the smoky taste of baked beans, but they can be mealy.

I usually just use Frank's wing sauce. Anchor Bar wing sauce is pretty good in this context, too, but I'm not sure if it's only available regionally.

I don't like mushrooms cause of texture. Ditto calamari.
Mushrooms have many different textures. Even if you don't like sponginess of a typical raw button one, they're an essential ingredient for their sweetness and earthiness in so many recipes. You can always pull them out of gravies or strain them or whatever. I hear you on calamari, but if it's cooked properly, it's usually pretty crisp and/or tender. When it's rubbery, it's inedible (kind of like raw octopus to me, but it's not because of texture which I'm not a fan of, but mostly don't like the taste of raw octopus).
One of my kids made some tacos last night. So we had a bunch of shit left over plus a pound of meat. So I said fuck it. There were two ears of corn I fire roasted for toppings plus we had fresh avocado, fresh cilantro, fresh jalapenos, lime and some leftover roasted tomatoes and onion. I bought a giant bag of dried guajillos and another giant bag of dried anchos a month or so ago. I went ahead and toasted 2 anchos and 3 guajillos off to activate the oils and then put them in a pot of super hot water and let them steep for 18 minutes. It smelled like tea. After reconstituting, I chopped then processed the peppers because I didn't feel like sharpening a knife to the point I could get what I wanted out of the pepper skins. I added the guajillos and anchos to the cooking ground meat and then also had fire roasted a serrano which I chopped and put in to cook in it. Added water and taco spices and let that go for a while. Taco meat came out very flavorful but not as spicy as I thought it might be even with the fresh jalapeno slices. Self-critique is that I had to add a little salt to my tacos. Rarely ever do I have to add salt to anything I cook, but it needed a touch this time all else being money. :/
Growing up, what I ate was fairly basic and limited. A lot of flavorless meat, pasta, and potato. My father is a super fussy eater and my mom doesn't enjoy cooking - so dinner usually came in large quanties but little to no flavor. Well done burgers, boiled chicken tenders, Hamburger Helper, hot dogs with mac and cheese, egg sandwiches, plain cheese pizza. Things of that nature. I became a more adventurous eater in my 20s and 30s.
I've had mushroom sauce in various dishes, like stroganoff. I don't eat bananas because of the texture, but like the flavor of banana cream pie.

I think my least favorite foods are lima beans and water chestnuts. They both have a textural element to them that I hate, but they also don't taste very good to me either. Water chestnuts have that gritty crunchiness to them that I find unpleasant. I don't really like beans that have a tough skin that ends up like you're chewing a small tarp. Kidney beans can be like that too sometimes.
I had some uni (sea urchin sex parts) once. That's something people hate for its texture. It was alright, I guess, but not something I've sought out again.

The sauce makes me feel kinda gross if I eat very much of it. A baked mac and cheese with a little bit of a crust on top and maybe some bread crumbs is usually good though.
