The only cheat I've had is french onion soup. twice. I don't really count that. I haven't bitten into a piece of meat since 2020. It's been good for me to see what I can naturally do vegetarian at home so that our rotation has lots of options.
Doing portabello mushroom cap cheesesteaks tonight, so that should be added to the rotation permanently I think. I'm going to go Meatless Mondays and less meat at home once the month ends.
We do this and it's honestly easy and great. I'm trying to get off the fake meat stuff because of the salt content, but I love me a mushroom in any shape or size.
gelatin isn’t exclusively pork. It’s in all animal bone and connective tissue. The key to knowing how good of a stock you made is whether it turns into jello when cooled. Tells you that you simmered every last bit of goodness out.
Gummy candies that are vegan probably use agar agar, xantham gum, or guar gum. Maybe a combo of all of them? They’re all plant derived thickeners and emulsifiers.
So Vieux pointed out that her initial comment about "gummies" being made solely with gelatin was about weed gummies/edibles specifically, and that vegan alternatives were harder to come by.
This sort of strikes me as odd on a cultural level. Seems like there's a good bit of overlap between cannabis use and veganism/vegetarianism, though I might be exaggerating that stereotype/prejudice in my mind. Maybe the vegan thickeners don't provide as good of a solvent/base for the active ingredients in the gummies? I have no concept of what the manufacturing process is. Definitely something I'm curious to look into and learn about more, but it will be a few hours before I have the free time to engage in the armchair chemistry.
huh, weird. might be a cost thing. a pound of agar is like $45 and needs about a 1:4 ratio of agar to liquid. Gelatin is only $19 for 1.25 pounds and you need 1 tablespoon per 2 cups of liquid.
also, this is easy to work around but, agar needs to be brought up to a simmer to activate while gelatin doesn't like the heat all that much.
anyway, if anyone is looking for vegan friendly gummies - evergreen organix & sava are vegan and mindy's is vegetarian/non-gmo. if your fave dispensary takes requests.

Mushroom cheese"steaks" are bomb. Stuff em with peppers/onions/chilis etc and grill em, toss em on a bun. More like a cheese steak burger but whatever.
I made this NYT Rice Krispie treat recipe today for work and it was by far the lowest effort to highest amount of praise I've gotten for anything I've ever made. Highly recommended.
just in general practice, I'm very much a separate my foods kind of person. don't like sides touching, arrange my plate so different sauces don't touch. that kind of thing, so any sort of different take really takes a lot out of me lol

Since Kyle has become an adult some eating habits stuck. Plus, my stepfather Ike used to stock sweets. I'm an addict. There's always cookies in my house also. Oreos and raw dough.

Is anyone a DoorDash/Postmates/Ubereats driver and what is the best thing I can order as far as it being later in the night but real restaurants are still open in your opinion?
Just in general I wonder how the economics of that works.
I hate doing it because I used to be the one packing that shit up and getting paid fucking zilch for it, but I do tip my drivers in the COVID era.

I should be clear that I always tip delivery drivers lol I just hate DD and think it's bad, but during COVID I've caved and used it because I was pretty heavily isolated, at least early on, and now I guess I'm hooked to some extent.
It's bad for restaurants and their workers on several levels, and I think it's ultimately bad for the consumer as well. I'm not opposed to getting takeout on occasion, obviously, but I think legit sit-down restaurants are supposed to be an experience and a community. All this no-effort takeout stuff is atomizing. Speaking outside of COVID here.

I ended my vegetarian month today (technically only did 29 days - a leap year February worth). I came away convinced that some of our standard dinners - italian subs, peanut pasta, burgers and roasted veggies, veggie tacos (cauliflower, sweet potato, or black beans as the "meat") - can be just as good vegetarian, and found some new recipes (chickpea curry, kung pao chickpeas, sheetpan cannellini and veggies). I would call it a success.

I got back on the wagon today. Pimento cheese sandwich and caesar salad for lunch from this cafe chain called Newk's.
The sandwich was way greasier and more decadent than I thought a pimento cheese sandwich would be, and served hot. It was tasty, though. Just not what I was expecting.
Also odd, it was spelled "pimiento", which is apparently the correct spelling for the pimiento pepper that is used to make pimento cheese and stuff green olives. Pimento must have been a misnomer that caught on. Wild.

man I love Newk's, but vastly prefer their pimiento in mac & cheese form, because a greasy mac is ok in my book. I usually just get a half sandwich of whatever and a bowl of the pimiento mac

Caesar dressing is made with anchovies
Traditionally, I know. I think I mentioned that ITT at some point recently. Their menu had the little V next to it, though, so I was operating under an assumption that theirs did not, but I wouldn't be shocked if whoever designed their menu didn't know. They should, but it's pretty hard to trust businesses to do their jobs (speaking as someone who has spent five hours this week on the phone with my health insurance company, whose shitty website kicked me off their plan late last year because an auto payment didn't go through, and now I'm having similar problems getting a payment to process).
My sister loved caesar salads when she was younger. When she was about 8 we went to this place where they made the dressing tableside. When she saw them start mixing the anchovies in she was freaking out, had no idea.
