I'm with you about ham generally though I don't mind it on Supreme pizza for some reason. It's normally saltier on supreme and maybe masked by other flavors? Not sure, but yeah, Ham is bottom tier meat.
While I agree with both points (don't mind on Supreme but nasty otherwise - especially big thick cubes or slimy slices on pizza), some hams are among the best things in the world to eat. Many are melt in your mouth. Exhibits:

There are dozens of other quality hams, but not the shitty boiled crap that comes in packages that most Americans eat. :yuck:
Yeah you've got a point here, didn't think about the nicer types of ham. Was thinking of your holiday ham, lunch meat ham, cubed ham, etc. All very bad.

Which ones though? Lowest bar I can go is like Sara Lee Honey once in a blue moon. I don't mind the spiral sliced Honey Baked type hams. I'm not going to buy one, but if someone has it on a holiday platter, I'll probably get a couple slices.
Anybody have any suggestions for meat substitutes to use in place of andouillie sausage? I've got some rice dishes that are great with more flavorful sausages but I'm mostly eating vegetarian these days.

No andouille rules too. I just went to the store and bought a bunch of it for boiling crawfish for my daughter's birthday tomorrow. Found some pork and pineapple and pineapple jalapeno sausage as well. So we'll try those along with the andouille. You'd think "Impossible" or someone would have come up with something by now.

I did my 3rd ever batch of crawfish yesterday. I can't rep for having crawfish skills since I am inexperienced. But I've been around enough of them to know a bunch of stuff it not technical nuances. Seasoning was several heads of garlic, bulbs of onion, squeezes and then halves of a bag of lemons, 6 oranges and some other sweet citrus, 3 stalks of celery, 5 serranos (for fun), salt and one jar of Extra Spicy Crab Boil, one jar of regular crab boil and one small bottle of liquid crab boil.
With the 2 sacks that we boiled, we did red potatoes, 15 ears of corn on the cob, dozens of mushrooms, 5 packs of sausage (3 andouilles, 1 jalapeno & pineapple, 1 jalapeno & pork). I think I got the timing right on everything. While the water was boiling the seasonings, I put in the potatoes about 5 minutes before we added the crawfish to give them a head start. You don't want them undercooked where the insides are still raw. And you don't want them overcooked where they just break apart into the water. This worked out pretty well and was something I was hoping for because of the super short time the crawfish is at a rolling boil (3 minutes once it returns to that). Spice level was pretty good. Shells were easy enough to peel. And crawfish didn't get oversoaked. Everyone said they were great (and I had a couple pros there) which was a cool affirmation because I'm such a novice. We pretty much wiped everything out.
last night i ate spaghetti and meatballs while my wife was at yoga. after yoga she called and asked if i wanted to go eat indian food and i said yes and ate another entire meal of chicken korma.
Back in the Cola after a week and a half in Texas and LA. I had to go grocery shopping, so I decided that I’d make tacos and eat those the next 3 days. Made a basic salsa which is tasting very good. I decided to forego mangoes, corn and all the usual shit we like in that and didn’t roast anything off. I went with 6 vine tomatoes, one pint of heirloom cherry tomatoes, 3 limes and zest, a vidalia onion, couple toes of garlic, half bunch of cilantro, 3 jalapeños, 2 serranos and 1 poblano. Spices were cayenne, black pepper, cumin, smoked salt and smoked paprika and a few shakes of RWV. Liking.
