spent the morning baking for a 65th anniversary picnic tomorrow. made claire saffitz' loaded cornbread and about 4 dozen christina tosi chocolate chip cookies (with flaky sea salt on top always). i want to eat it alllllllllllllllll.

So yesterday I was faced with the task of procuring dinner with empty cabinets since I had eaten all my food before not-aroo and hadn't had a chance to get groceries. At first I was going to just grab some Indian take out but figured I'd look through the pantry and see if I could whip something up. I can make a half-decent curry but didn't have any chicken or chickpeas to go in it, and when I saw I had some pinto and black beans I was like "Hmm, maybe I can try making a curry, but with Mexican spices instead, and see how that turns out." So I made a paste with some anchos and got to work sauteeing my onions in it, then added my usual burrito spices to it (cumin, Mexican oregano, paprika, chili powder) like I usually would with my Indian spices. Added some tomatoes, let it simmer for a bit, pureed half of it...all the while feeling that little rush of excitement that I get when I'm feeling creative and trying something new. Then I gleefully added the beans and let them simmer in the liquid, thinking to myself "Hmm, this looks like it would make a good topping on something"...and then it hit me.
I was just making chili. That's all it was. Not "Mexican curry". I nearly died laughing; I really thought I was doing something for a bit. But no, it was just chili. And only half-decent chili if I'm being honest. Needed more of a kick.
I just had leftovers and it still tickles me so I thought I'd share.
Bechamel def makes the best lasagna. Never really understood the huge love for lasagna until I made it with bechamel and then I got it
hell yes. I did this the last time I made one for a neighbor who had lost their mother and one for us. First time trying it with bechamel and I used the huge full sized flat sheets so that there was no overlap. Fresh sauce from my garden ingredients. Gottamn that was tasty as hell. They said it was the best lasagna they ever had.

I am about to use the leftover vegetarian chili that SupeЯfuЯЯyanimal, Katy Mae, Deto et al made at Camp Second Chance as a base for chicken chili tonight. We ate really well at Camp this year. So many cooking maestros.

it's so good, and great for a potluck/group meal. but i will warn that apparently a single jalapeno in the entire batch was "too spicy" for a bunch of elderly white people.

My bf will eat anything. I eat most anything but seafood. My bf’s 70 year old dad is the problem. He is picky and has only a few teeth so food has to be on the soft side. No spicy, nothing tough/chewy, no beans. He lived on junk food and fast food before coming to live with us. We don’t have the stomachs for that kind of diet. He has been polite about the veggies I make but I know they aren’t his fav, but he still needs to eat them. I have been making chicken, veggies, pasta, and potatoes out the wazoo and am tired of it all. The easier the better! Also no grilling (we don’t have one))

We all know about the eternal battle between Team Pancakes and Team Waffles. Meanwhile, the ladyfriend is one half of Team Crepes.
Team Crepes is a weird, small, yet proud group. Ladyfriend says that crepes can't be made out of a box, therefore it's better.
I may have eaten zero croissants when I lived in Paris, but I ate multiple crêpes a week. I never did the sweet ones, only the "salées" ones - usually what was basically a French ham, egg, and cheese sandwich. #AmericanInParis

I have a similar story. I make the same chili a lot and one day I thought I would change up my recipe a bit. Used Italian spices and small cubed chicken instead of Mexican spices, ground turkey, and beans... I made a chicken and veggie pasta sauce. Just was missing the pasta.

Welcome back Bonz, but I do not find it strange that your presence being requested in the Orgy thread and then you showing up, like it was the quacking Bonzai Bat Signal.
most boxed pancake stuff has baking powder or baking soda so they get that fluffiness, which works against making a thin, flaky edged crepe. I've never really been satisfied with crepes from pancake mix. Plus a basic crepe batter is really easy. It's just flour, water/milk, eggs, and a little sugar and butter.
