It's insane what you can do with garlic, ginger, lime / lemon, cilantro (back off, haters), basil, paprika, salt and pepper. With the exception of ginger, that blend can be used as a base in most cuisines.
For a little extra razzle dazzle, I'll sometimes add any of the following:

Word. Yeah, I'd use the white when it's called for just because it's a slightly different flavor and brings some enhanced pepper flavors. I use both all the time when I cook or eat.

Ginger? I don't like the pickled kind you get at sushi restaurants, but I don't mind fresh ginger or galangal. You kind of need it in some things.

I hate ginger almost as much as I hate cilantro.
I fucking LOVE ginger. Fresh, pickled ginger. Not ginger beer or drinks or weird shit like that. But I eat a lot of sushi. I only eat raw fish not cooked fish (unless it's salmon).
i love pickled ginger from sushi restaurants, and I love that my wife and most people I eat with don't - so more for me!
i love fresh ginger in stuff I cook, but it's especially good in smoothies/juices. Carrot ginger apple juice is quackin bomb.
Not a fan of ginger beer, but I like canadian whiskey and ginger ale.
My sister and I fight over it so we always order extra. You would have to order your own if we were to go to sushi together or with my family.
EDIT: and I do like fresh ginger in cooked food as well.
I realize that cilantro tastes like rectum to you and not soapy as it does to most people who have that gene. But pickled ginger is even more soapy. They call it a palate cleanser. Comet or Ajax cleanser probably is too in a similar way. Fresh ginger, like snowman said, is a must in vegetable juice. It's allegedly good for arthritis and your joints and ligaments.
For the record, you know I have allergy induced asthma and have broken my nose three times. I can't nettypot because my sinuses are so fucked. My palate might not be the most accurate. I just call them how they are to me.

So I did a taste test today and ate cilantro. It does not taste like soap to me, but it tastes like grass and dirt. Very strong dirt grown vegetation taste to be precise. It was pungent and because I ate it and swallowed it to get the whole flavor, it took awhile to get it out my sinuses. Luckily I only ate a very small piece and it didn't ruin my dinner. My taquitos, guac And sour cream was delicious.

Nah. I stand by my point. You gotta use two corn tortillas for a taco or else they tear and fall apart. It's stupid.
They aren't that expensive are they? Its not that time consuming to pull two tortillas when you're making your taco right? You don't just use the top of the bun when you eat a burger right..?
A flour tortilla is great if you wanna eat a lot of bread and not really take in the flavor of what's actually in your taco, plus corn tortillas can crisp up in a way that flour tortillas dont hold a candle to. I love flour tortillas for Texmex tacos, ground beef and pace salsa or whatever. When I put a lot of effort into marinating or slow cooking meat, I want to enjoy it more than I want to enjoy a bready floppy cardboard mess. Give it another shot my man.

I'll be eating corn tortillas tonight because I have street taco ingredients and that is traditionally how they are done, but it just feels like I'm eating an inordinate amount of grains/calories when I eat them. Sometimes I end up just doing all the ingredients in a bowl, and I might throw some shredded corn tortillas in that, or I'll just do the one tortilla and make it a lighter taco and be careful with it, and certain tacos (street-style tacos, fish tacos, which are two of my favorites) make more sense with corn tortillas, and there's just something off about your typical corn tortilla. Like, I eat them all the time, but they kinda suck/are frustrating.

Tho Mexican good in general is hard to come by here, and good Mexican is even harder. Like, wtf are they doing putting cabbage, coleslaw & beets on a damn taco?!

I’m not sure where I’d even get maze here. The “Mexican food” section here is essentially El Paso salsa, seasoning and taco kits. 🙄
I got to do some decent eating in Pensacola this weekend. Burger and Fries at George Bar & Bistro was great as it always is (as well as the burnt sugar latte and strawberry-poblano margarita I had). I was sitting next to this redneck dude at the bar with a beard (baird), trucker cap and other standard redneck indicators. He got the shrimp and grits there which I've had before. We were talking about them, and I told him that I like them there. He said, "yeah, and it's a bigger portion than I thought it would be." We were talking about decent places (George is certainly that), and he's like, "Yeah, cause I don't eat at no chains or no corporate restaurants. I'm from Louisiana (Monroe), and we don't do that." I nodded in appreciation even though lots of people do eat chain crap.
I got to Craft Bakery and got a maple bacon knot that I get pretty much every time I'm there in town. I went to Dharma Blue with a friend on Sunday. I hadn't been there in a few years. It's still great. It's an odd mix of New American and Sushi which is a random combination. But they had all kinds of fresh fish on the menu (swordfish, redfish, snapper, grouper and even tripletail). I opted for the $20 sashimi plate. They said whatever I didn't like of sashimii just tell them, and they'll give me more of something else. I said that I didn't really like raw octopus, which I don't. But I literally forgot how much I despise raw eel. Oh that stuff is funky. However, all the fish were super fresh and delicious. I got a bowl of tomato, chorizo and bean soup and then a steak with mashed potatoes and grilled asparagus. Nothing major about that, but they generously doled out the veal demi glace which was delicious and soaked into everything. My friend got grilled chicken and mashed potatoes with a beurre blanc sauce that's one of the better ones I've ever had. Good stuff. I need to go back there again soon.
