Also, since your boy can cook and make gravies, here's a particularly good way to make gravy that's easy as shit to do. I'm not going to go all in and say roast bones and have beef stock as your base though more advanced cooks can substitute haute technique for the shortcuts below.

1) Begin with a base. This can be bouillon, a packet of au jus or brown gravy, beef base or certainly and more preferably beef stock. Some people like to begin with a roux, and that's OG, but you don't need to build the flavors that way. Add water as instructed and bring to a simmer.

2) Add the things you want for additional flavor. Some people like garlic, parsley, green onions, fresh thyme or whatever. We use mushrooms. They have been pan sauteed in olive oil and slightly caramelized for enhanced flavor, sweetness and umami. Add whatever to your pot.

3) Add 1/4 cup of whatever red wine you're drinking and roasting-pan drippings. The more drippings you get, the more flavorful your gravy will be. Unless you have health issues, the more fat and juicy bits you can get out the roasting pan, the better.

4) Let the gravy simmer on medium low until it reduces an inch or so or until the rawness of the wine is cooked out. That takes maybe 10 minutes max.

5) If you want to thicken your gravy, put equal parts of corn starch and cold water (this is called a slurry) in a bowl and mix or whisk until it's combined (5 seconds). I use 1 teaspoon to 1 teaspoon, but depending on how thick you want it and how much you're making, you can add more or less. It's important that you use cold water and dissolve the cornstarch or else it will become lumpy. Add the slurry to the gravy and stir. This will thicken immediately.

6) Further season to taste (salt, pepper, cayenne, herbs, etc.)

This way to prepare beef gravy is easy and an 8 out of 10 on the gravy taste scale.  It also works for pork or chicken.

That's how good it is.  It's a sauce, mixer, entree.. the versatility
