we are missing quite a few really good veggies here too. like kale, arugula, sweet potato, shishito peppers, etc but i guess we can just lump kale and arugula into lettuce and all peppers into bell peppers

i genuinely like all of these vegetables, this is a tough one for sure.
my first instinct for this round is corn. corn isn't that exciting all on its own, and in it's highly processed form is the key ingredient in a lot of shitty food products. but corn tortillas are great, and cornbread is heaven.
defense of others at the bottom so far:
cauliflower also isn't much on it's own, but i've had a lot of great cauliflower dishes. yeah you have to do a lot to make them worth it but still they can be quite delicious when it's something like kung pao cauliflower. but i won't defend it hard, in fact if it remains tied i might move my vote to save one of the others at the bottom.
celery, as has already been mentioned, is a part of the trinity, it can't go out first. also a key part of eating wings.
eggplant rules. i prefer eggplant parm to chicken parm. and BABA GANOUSH! the thinking person's hummus. also MOUSSAKA! the thinking person's lasagna.
i love peas. peas with mashed potatoes or with shepherds pie. plus one of the few vegetables that actually tastes good out of a can, so you can always have some on hand, easy way to add something green to a weekday dinner.
asparagus, some good arguments have been made against it. i honestly don't love it so maybe i should be voting for asaparagus. ah fuck it i'll change my vote to asparagus.

onion (the obvious winner) carrot (dark horse winner, carrots are amazing)
I’d be remiss if I didn’t point out that many of these are actually fruits.
I got trashed for that earlier in the year and am likely the only motherfucker here that ever took a 300 level college course called Vegetables 301. I get where people lump cooking ingredients into "vegetables" and sweet things as fruits. But vegetables by nature are vegetative where a plant or part of a plant used as food. Unless I'm off,
Tomatoes - Fruit Onions - Root but aka a bulb vegetable Corn - Fruit Squash - Fruit Potatoes - Tuber Broccoli - I think a cruciferous vegetable but it's technically a Flower Bud Eggplant - Berry or possibly a fruit Spinach - Vegetable Lettuce - Vegetable Cauliflower - See Broccoli Cabbage - Vegetable Mushrooms - Fungi Carrots - Root Vegetable Celery - Vegetable Bell Peppers - Fruit Cucumbers - Fruit Brussels Sprouts - Vegetable Peas - Fruit Green Beans - Fruit Asparagus - Vegetable
So this survivor isn't really that much of a vegetable survivor. It's what Americans consider to be vegetables. The caveat on that is Americans are fucking dumb - not so much relative to botanical classifications, just dumb in general.
