Mushrooms is the perfect combination of taste, health, and versatility. Voting for it before the top 3 is absolutely asinine and should be a bannable offense.

You guys really like spinach that much? I've been eating it all week its solid but cmon its not as interesting as any of the others (except maybe bell peppers). It should have followed lettuce out the door.

Yeah, all but the trippy ones are delicious. I use them in almost everything I cook. And I like all of the 8 or 9 varieties I've tried. The only issue I have with them is that different types give off different amounts of water and at different times. So if you're caramelizing them before use, they can brown at different times if used in the same skillet.
Reference back a year or so ago to the "you're probably cooking mushrooms wrong" where there is a 3 step process - heat until water comes out, crank the heat to get rid of the water (alternatively you can drain it) and then they'll begin to brown and bring out the extra sweetness. I know some rastas that swear by the tinctures, particularly lion's mane. Supposedly it repairs and protects shit at the cellular level, but I don't take them and haven't researched.

Some people think they smell like sex. They contain a compound called androstenone which is similar to androstenol which is a pig phermone. Some believe this is why pigs get excited and find them though they grow underground.
I like them enough. But I once had some mashed potatoes that were over truffled as a side dish. They were good for sure, but there was too much there, and I was already full from dinner. So I didn't finish all of them. I'm not sure if I've ever had the white ones. I know that mushrooms and les truffles are distant cousins as they're both fungi. But mushrooms usually grow above the ground whereas truffles grow below ground.
Those cucumbers look delicious. I prefer cucumbers to spinach but spinach isn’t necessarily a deal breaker. We are around #10. I know motherfuckers are reading this thinking, ‘come on esteban, please tell us what vegetables you ate today?’ So I’m going to have to go ahead and tell you - tomatoes, corn, mushrooms, onions. 3 colors of bell peppers,avocado, jalapeño and I ate some lays bbq potato chips at work so potatoes in a processed form.
Adios pickles. Cucumbers slightly underrated - Probably should have been 8 or 9. Cucumbers go excellently with seafood and fried chicken. Also upper level roast beef poboys. Whether sweet sour dill or whatever you get that nice cut balancing out whatever richness it’s being paired with. I also like them slightly peeled with salt.
