Haha. Late night tip turned 13-10 to a tie. I enjoy all remaining vegetables but will join Vieux with carrots. I dig carrots. So many things you can’t have without them including properly dressed banh mi. Escabeche at a Mexican salsa and condiment bar. Chicken soup. Roast beef or chicken and vegetables. Raw. Plenty more uses but they lasted long enough.
Big vegetable day today going for me. I was talking about it in the secret forums but vegetables for me (fruit, seeds, fungi etc). Turnips beets carrots corn bell peppers jalapeño peppers poblano peppers potatoes squash zucchini mushrooms celery onion garlic and then guac so avocado tomato cilantro serrano lime and corn chips. Corn Chips from Fritos to Doritos to tortillas bagged or fresh are the top [tm] snack vegetable.
I wouldn’t want corn and bell peppers to both go out but it’s probably close to time for bell peppers. They rule and are a utility that good cooks cannot do without. Plus stuffed they are the greatest. And smoked paprika and most paprika coming from bells.
But 7 or 8 was their ceiling. Peppers in general are like 3 or 4.
Absent shenanigans adios bell peppers. I had a choice today of green, orange yellow and red for the stew I made. I chose yellow. They all kind of mostly taste the same though you can get a little bit of sweeter notes with the red and yellows. Not sure about orange. I’ve used them but not enough to know any nuances. I’m assuming it’s not a pick between yellow and red and is just some variety that is orange. But I don’t know for sure so caveat. I like them. I don’t have the cookbook from the 1800’s Ursuline’s Nuns. But I shall request that from sibling #5 and pass it along. It’s the goat of stuffed peppers base which can be modified for new ingredients, techniques and availability of shit like panko. Haha. Promise I’ll get a copy of that motherfucker. It’s so good.
