I know that they actually serve those Jack Daniel's coolers in plastic bottles at Roo. So I"m pretty sure you can buy them in plastic bottles? They're pretty good, I enjoyed them when we were sitting on the beach...
I don't know if you'll be able to find it near you but if you can, try Leinenkugel's Berry Weiss. It is a fruity beer flavor. They also have a lemonade and apple flavor but the berry is my favorite. It still has a definite beer flavor but not as strong as just beer. It is so much better in a bottle but they do come in cans.

Here's something that has worked for me in the past: Save your gallon milk jugs and wash them out really well. Go to the liquor store and buy your favorite adult beverage and mixers. Mix your drinks in the gallon jugs and put them in your freezer for 3-4 days. Put these in your cooler, and you'll have twofold functional gallons of frozen drinks (they help keep the other contents of your cooler cold, and you can trade that convenience for a good buzz) which will melt in the Tennessee heat at about the same rate as you can drink them. This also works for, you know, water.

At 24 I went from not drinking at all straight to drinking Chopin and Belvedere with nipple on the bottle. Not really, but you get the idea.

To assist, I'll second the Malibu rum mention, and there's plenty of plastic(albiet cheap) liquors to be had. These aren't the best straight up, but are perfect for mixing. you can use the website below to fashion up some lovely drinks, and you can always transfer the glass-bottled alcohol over to a seled container if you'd like.
On the box wine topic, my local wineshop carries Black Box. It's surprisingly good! Just whatever you do: step away from Franzia.
Also, if you're going to be trying to keep it cool, crack that box open and just put the silver bladder inside directly into your cooler. It will kind of mold itself around whatever you have in there, taking up tons less room. On a related topic, there is a guy here who calls drinking directly from the spigot "hoarking the spacebag." I sort of love that.
