maaan I'm eating homemade banana walnut pancakes right now with maple syrup for my dinner. pancakes are awesome because all you need is a pan. slop that mix on there and start flippin' fool.

Nah. It just looks like a tube.
You're supposed to use clarified butter so that it has a higher smoke point so the pan can get hotter and cook faster. The egg can be flavored with tomatoes and herbs but not a lot of places do that.
It all comes down to the fold for most of us.

A French is a tri fold thin omelet that you cook really really quickly in a very hot pan. Then fold it as it comes out of the pan vs folding it and browning it. They turn out really creamy and good esp with just a little spinach or ricotta. I will make you some when we go camping next week.
