They booked Chino Moreno's side project - crosses - in 2013 and have promoted Deftones shows in the past at Pomona, etc. Additionally, they have shown tendencies to book bands that were formerly untouchable after critical re-valuations (e.g. Brand New in 2015 and Jimmy Eat World in 2011 come to mind), and with Pitchfork et al now being super on the Deftones train, there'd be no reason not to book them if they wanted them. I think the issue would be more why would Deftones want to play the fest when they could probably just do an early summer gig at the Greek or maybe even take a long shot on the Forum. It's lined up for next year pretty nicely, though, with a new record probably out late 2018.
I also don't buy they'd have issues booking Metallica. They've worked with them as recently as late 2016 to put on the "surprise" Fonda Theater show in December 2016 and Lars wouldn't say the public comments he did if it was a managerial no-go for them. Dates - again - look pretty good for them next year and it would be their last window until... 2021? 2022? ever? ... so if it doesn't happen next year, I think the argument has more legs.

I could be wrong here but it also seems like an established act like the Deftones would be more expensive than other acts they’d have in their place and might require a higher billing than than they’d be willing to give them. They have also been far more active than someone like APC so it would be much less rare and redundant.
Grab Serj and Chino’s side projects on the cheap? Sure why not. Book their more expensive project and put them on the second line? Not so much.

Another thing to keep in mind is that GV booking and Coachella booking can be two completely different things. They don’t always share the same staff and interest. Just because something was a GV event doesn’t mean Coachella would do the same. They’ve also booked stuff for Coachella that GV has never booked before.
As far as Pearl Jam goes, the guys behind GV don’t like grunge which makes sense since they’ve never booked anybody for that genre. I’m guessing they lost interest in Metallica once they went commercial, same with Green Day.
Metallica went commercial in 1991. And maybe I'm not following your point correctly, but Coachella has booked Lady Gaga, Calvin Harris, Drake, RHCP, The Black Keys, Kings of Leon, Kanye West, Jay-Z, The Killers, and Jack Johnson, all commercial artists.

Iron Maiden kicking off their 2019 US dates kinda works. Metallica kinda works, although less so after playing ACL and having generally done the festival circuit. Stones for sure. Rihanna Bruce Dead Co would be newsworthy but won’t happen Jay-Z? Kanye? Daft Punk U2 Fleetwood Mac Adele

In my Dead Co plays Indio fantasy, you have someone like JT as a big mainstream draw, some rappers who take acid, a Skrillex or Bassnectar EDM name, Tame Impala, and then a bunch of the neu-Laurel Canyon acts in the small print.

I'd say it's special in the fact that he hasn't played a big multigenre festival in the States before. It's a step-down from Bey, but a really unique grab regardless.
