Mae Days will have the best festival cuisine NYC has to offer
Foreverfest will have the best wings, beef on weck and pizza in the country.
this sounds like a very northeastern united states food item. is this when y'all put clear Karo corn syrup on pancakes with a tall bottle of Moxie Cream Soda?

Moxie is great, but it's definitely not cream flavored

Will you have spiedies? My wife had a coworker from the Buffalo area and they were so excited for us to try spiedies, which you can only get there apparently? It was so disappointing and we still joke about it.

No, they are a Binghamton area thing. Weird that they consider them a Buffalo thing. I rarely see them on menus around here.

Maybe they were from Binghamton. It's just weird that that one area is only place they eat that crap.

It's a hot rare roast beef sandwich with horseradish and au jus on a roll with salt and carroway seeds. It's delicious.
Watch this (should start at 7 minutes 41 seconds) about beef on weck, from my favorite documentary by Rick Sebak "Sandwiches That You Will Like". It's a short segment that will explain everything you need to know.

I've never heard of this.
my first year of high school there was a guy a year older than me down the street that was kind enough to drive me to school for gas money. his whole family was absolutely lovely, just a fuckin' norman rockwell painting this family. they were all yankees, and every school day i'd walk to their house, where they always had a full on family sit down breakfast meal with jugs of milk and OJ and shit on the table, just like a TV family. they were always so nice to me and each other.
so that all sounds good, but instead of maple syrup on the table, they would have a bottle of clear Karo corn syrup, and they would slather their pancakes in it. i was so happy to get my license and start driving myself to school so i could get away from that horror show.

That’s not a thing here, we live in the land of real ass maple syrup

OMG. That sounds disgusting. Why oh why? There is so much local maple syrup here. And maple syrup is so good.
Since Mo Rocca will be at my festival, this video ties in nicely. (Also featuring Buffalo Bills legend Thurman Thomas and the late, great Incredible Lance Diamond.)

Light or dark? I’ve never heard of either, but I do have a memory of my grandmother making simple syrup (water and sugar boiled together, basically) for pancakes. No idea how reliable that memory is though because it’s set in their house in Kentucky, so I couldn’t have been more than seven or eight, probably younger.
