Nate's one of the best comics working right now. As a bonus it's very hard to imagine him being a sex creep.
For the New Orleans folks: we got into town around lunch time, went to Turkey and the wolf and got some amazing sandwiches. We decided to get a little fancy and got a last minute reservation at Galatoire’s….it was outstanding and everything we could have wanted in a fancy dinner. Tomorrow we are going to Molly’s Rise and Shine for breakfast and lunch is still up in the air. I also forgot to mention we are traveling with our 3 and 5 year old daughters and they are both being amazing trying everything we put In front of them.

We ended up at Molly's Rise and Shine for breakfast and all of us really enjoyed it. I got the Grand Slam McMuffin (sausage patty, hash brown, carmelized onion, cheese) and it was great....The best part was the english muffin. MY wife got the Chicken Biscuit and the kids split the Biscuits and Gravy and they all seemed to really like theirs (clean plates all around). We decided to skip lunch and start heading towards Gulf Shores and ended up stopping in Ocean Springs, MS for lunch. We were suprised how much we liked the downtown are. Yeah I know the mayor of Ocean Springs. They spent a shit ton of money on the downtown. There are a couple decent high-end dining options as well. I almost never go to Orange Beach because it’s about 55 minutes from Pensacola and I’m rarely in Alabama, but I ate a few things from chefs there at a chef tasting fundraiser thing in Pensacola Beach once. That gave me some hope there were decent places to go. Pensacola Beach doesn’t have much good although the city has more than it’s fair share of quality dining options for its size. I lucked into reservations at Bonelli’s this Saturday night. That’s an Italian place that’s impossible to get reservations unless it’s a week out. It’s very casual though the food is super interesting because they use a lot of jalapeños and habaneros giving many of the traditional Italian dishes an unexpected Mexican influence. So you get surprise tastes in their dishes if you order them on a higher spice level. Sauces are cooked to order so have some zip and fresh aspects to them as opposed to cooking down red sauce all day which I’m also a big fan of. They make their own cellos there, and my favorite thing I ever got there was Aunt Pam’s Mashed Potato Croquettes. They are full of bacon and some house made capicola and are light, airy perfection.

Winn Dixie didn’t have plain sparkling spring water, so I went to Fresh Market. I always hit their jars and dispensers of goodness and bring home bags of salted cashews, dark chocolate pistachios, chocolate dipped Oreos and shit. At the one in Pensacola, they also have lots of jars of candies. They had giant sno-caps maybe between the size of a quarter and a Sacajawea. Haha. They fucking rule. Had I gotten these previously, I would have been crack hitting them constantly and probably at least 15 pounds heavier than I am if dark chocolate puts on the pounds.
We had a super incredible meal at Bonellis. Table split a bad ass caprese and 3 potato croquettes. Two family members I was eating with never been there before so I was checking along the way and they were loving bite after bite. Entrees were meatballs and rigatoni on spice level hot, a Korean BBQ rib eye over some type of cheese ravioli and baked and a made to order pesto Angel hair with chicken. All excellent. Mr Bonelli came and a sat at our table and told us a story. So you know you’re family with the Italians if you show some respect. Topped it off with some house tira mi su which was different as they barely soaked the lady fingers for the texture. Perfect and not overly sweet. And an espresso. Yeah. Pablo you gotta let me know next time you are in NWFL so I can make it a point to come down for a day or so and get you a perspective on how the food over here can rate with big cities.

Y'all I am in the production office at the new show I am working and we get crafty lunches. St. James Cheese Company was today's lunch. HOOKS CHEDDAR SANDWICH Hooks Wisconsin White Cheddar with house smoked turkey, basil, tomato, mayo and avocado on fresh ciabatta.
I made blackened tilapia for the first time today. Had no idea how ridiculously easy it was. Delicious, too.
Main thing against blackening is the smoke it creates if you do it inside. Back in the mid 80’s, my dad used to blacken everything from chicken to fish to steaks or hamburgers. Because of the melted butter poured on during cooking in a super hot cast iron, that shit will smoke up your house. But what a great taste. I could be wrong but I think Chef Paul Prudhomme invented that or at least made it famous. A great tool for blackening is a skillet screen which will catch most of the popping butter splatters.
