We used to get tamales from our butcher in Las Vegas that were so good. I miss those.
anything that requires lots of chopping/prep is kind of a pain. like a lot of crock pot recipes are super simple until you realize you're going to spend half an hour in the morning chopping onions and carrots.
usually my wife and i switch out cooking duties, but often we'll make a deal whereby one of us does the sous-chef work and the other does the actual cooking.
It's usually easier with crock pot meals to prep stuff the night before and then just dump it in in the morning if you're one of those people that leaves the house for work in the morning.

I do some make the night before breakfast casseroles that are also great for dinner. Just toss them together and let them do their thing and toss them in in the morning or the next night:
Cheese Pouf (family recipe)
8-10 slices of white bread, decrusted and cubed 8oz sharp cheddar 1/4c melted butter 3 eggs 1 tspn salt 1/2 tspn pepper 3/4 tspn dry mustard 2c milk
1) Cube bread and cheese. 2) Grease 9x12 casserole dish. 3) Layer bread and cheese then pour over melted butter. 4) Beat eggs, stir in salt, pepper, mustard and milk, pour over. 5) Refrigerate for 4 hours (overnight is best). 6) Bake at 350 degrees for 30 minutes covered, then 30 minutes uncovered. This has a tendency to spill over when cooking, lay foil under dish. 7) Serve immediately.
Baked Blueberry Lemon French Toast (originally Damn Delicious, updated by me)
1 (12-count) package KING’S HAWAIIAN Original Hawaiian Sweet Dinner Rolls, cubed 3 cups blueberries 1 1/2 cups milk 3 large eggs 4 tablespoons maple syrup, or more, to taste Zest of 1 lemon 1 1/2 teaspoons vanilla extract 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg
FOR THE CRUMB TOPPING 1/2 cup all-purpose flour 1/2 cup brown sugar, packed 1 teaspoon ground cinnamon 1/2 cup unsalted butter, cut into cubes
DIRECTIONS:
1) Coat a 9×13 baking dish with nonstick spray. Place a layer of bread cubes evenly into the baking dish. Top with blueberries in an even layer, repeating 2 more times and ending with a layer of bread. 2) In a large glass measuring cup or another bowl, whisk together milk, eggs, maple syrup, lemon zest, vanilla, cinnamon and nutmeg. Pour mixture evenly over the bread cubes. Cover and place in the refrigerator for at least 2 hours or overnight. 3 )Preheat oven to 350 degrees F. 4) To make the crumb topping, combine flour, sugar and cinnamon in a small bowl. Add cold butter and toss to coat, using your fingers to work the butter into the dry ingredients until it resembles coarse crumbs. Sprinkle the crumb topping evenly over the bread cubes. 5) Place into oven and bake for 35-45 minutes, or until golden brown. 6) Serve immediately.

I have a pork tenderloin marinating and no idea what we’re having for sides with it. Also I’m about to cook whatever it is right now because we have the dinner time of 85 year olds.

Yeah, Hot Tamales are great. Mike and Ikes, too. I think they changed the Mike and Ike formula at some point in the past ten years to where they are not quite as good, though.

should go without saying they're at their best hot, but if they're done right the casing should be soft enough to eat, and I'm totally fine eating left over shredded beef/pork cold. would def need sauce

The tamales my grandma made definitely had lard involved, and the thought of cold lard is not appealing at alllllll
But damn they were SO GOOD when warm/hot. I need to learn how to make them myself. It was always an assembly line process, which I was involved in every year, but I've never tried to make them alone.
