I mean crepes are nearly always filled with something so that should also be considered. In the same way omelettes are filled with things and make them better.

Nope. The crispy fish complements the buttery grits perfectly. Put the hot sauce on the grits and the catfish breading doesn't get soggy the way it might on a sandwich.

I've actually never had Chicken and Waffles. I like both of those things separately a lot but I'm just not a huge fan of savory foods paired with overly sweet things.

chicken and donut is nice because it's not such a huge syrupy mess
I made baked beans for Thanksgiving per my dad's family request. The key to the recipe I found was adding a pound of bacon. I feel this is relevant to the discussion.

There's a taco place near me that does a great chicken and waffle taco with a bacon aioli and maple drizzle.
