I honestly wish I had time to keep up with these threads. I am just voting how I see it and I can't be convinced one way or another due to lack of time to keep up.
Oh but I'm still voting for Baltimore, not because of the crime, because crab cakes aren't that great.
What's your favorite signature dish for Houston?
For a serious answer I'd say Viet Cajun style Crawfish. Lots of options for as to where but I'd suggest Crawfish and Noodles. Its a uniquely Houston thing and so so good
Some other stuff- Beef rib at Truth, Brisket at Truth/Pinkertons/Killens/Khoi/Feges/Blood Bros, fajitas from the Original Ninfas, Nancy Cakes at Nancys Hustle, Goat Dumplings from UB Preserv (currently closed, but occasionally offered at his new restaurant Wild Oats), Chicken Hara Masala from Himalaya, Barbacoa tacos from Laredo Taquieria, Pho from the original Pho Binh
Baltimore. Seems really cold there. 40 degree days are apparently considered good and normal, according to the Wire. Sounds like hell. I don't care how many 30 dollar crab cakes I can eat.
Im low on Baltimore but you cant use stuff from the Wire for grading a city lol
Yes! I've been to Houston only once for approximately 8 hours on a work trip years ago, and this is the entirety of what I saw - concrete and pollution. If I didn't hate Las Vegas so much, Houston would be my first choice to go. It looks like the rest of you will likely eliminate Houston while I'm still voting for Vegas every round, and that's OK.

I lived in Houston suburbs for 4 years (ages 4-8). All I remember is going to the rodeo at the Astrodome one year to see George Strait, and his revolving stage broke facing the opposite direction from our seats. That city is dead to me.

You are correct. It was some terrible inland version of this with all the concrete and smog and none of the beauty of the water full of barges and stuff.
Are either of these unique to Houston or just Texas? I would think of Dallas or Austin when I think of Texas BBQ but it might just be my college football experiences talking.
I think of Viet-Cajun food as being the defining Houston cuisine but there is also a ton of diversity in the food scene so it is kind of silly to say Houston is defined by a single cuisine.

As for Tex-Mex - I like it. I eat it. It’s fine. But Mexican itself is so much fucking better. There are dozens of Mexican cuisines, and I don’t even know most of them. But I do know I’ve had some good authentico Mexican in Texas.
We had some central Texans in a few weeks ago and one of them said they weren’t going to eat Mexican here. I was like wtf? Do you not know that Mexicans live pretty much everywhere now (have for a long time) and many of them know how to cook and even operate restaurants? That’s such a dated mentality. I know there is fake Cajun shit around, but I’m sure many out of town creole or Cajun restaurants are perfectly authentic. Wtf? Pride.
That's fair- if you're ever around Baltimore check out some pit beef options (esp Chaps). Not putting it up there with the best Nashville, KC, or anywhere in Texas has to offer, but we definitely don't lack good BBQ here.

I'll take Houston BBQ over Dallas BBQ (someone might fight me over this but Dallas sucks anyway), but Austin is probably top in that category. All three beat the barbecue in just about any other state.
I think I lean Houston for both Tex-Mex and traditional Mexican of the three
