Now that I'm done basking in the glory of the most correct Inforoo Survivor vote of all times, I guess I'm going eggplant. Everything here is good, but I probably eat less eggplant than I do anything else. I could see going with peas, but they're one of my daughter's favorite things right now, so I'm holding off in her honor.

The peas hate is weird. Cauliflower and Eggplant aren’t good no matter how much you pretend they’re a good substitute for other things. Every time I’ve had someone tell me it’s just like mashed potatoes or it’s just like pasta noodles, no it’s fucking not.

We’re on the same page so far. Celery had to die and this round I started out on eggplant but could be convinced to go to cauliflower.

I don't know. Eggplant is a very good vessel for parmigiana and I stated yesterday. Outstanding really and far better for you and the chicken or calf that provided the veal.
As for noodles, zucchini noodles are great if it's a cold salad or poke or some shit like that.
