do think that empire is obviously better than new hope, but on a sci Fi level it really didn't add much to the already established world

I dunno. I feel like there's a hefty chunk in there. We see the first Star Wars large-scale land battle, complete with the totally kick-ass (albeit highly impractical) AT-ATs. We see an ion cannon - something that would become a big part of the lore in other forms of media - for the first time. We meet the Emperor, even if it's just as a hologram. Everything on Dagobah greatly expands the concept of what the Force is - in ANH, it's basically space magic, but in Empire, it gets loaded with a ton more significance, along with a bunch of stuff we didn't know it could do that we learn it can do. And then, yeah, Cloud City, carbon freezing, etc.
Side note, I recently rewatched Empire and was struck by what a well-constructed film it really is. There are some things that don't make sense, still (I guess there's atmosphere inside the gullet of a giant space slug living in a hole on an asteroid?), but overall, it holds up super-well, and the script is head and shoulders above that of any other film in the franchise.
